    Mango Pudding, A must-make summer favourite in the house when fresh mangoes are in season. Mangoes, milk, sugar, agar agar and condensed milk cooked together and set into pudding moulds. For vegan option, use coconut milk and coconut condensed milk. Adapt it to your tastebuds, this will be a hit in your house. Learn how to make this delicious mango pudding with step by step pictures and video.

    Mango Pudding

    Mango is one of my all time favorite fruit. Every year I wait for mango season to arrive to enjoy these juicy sweet fruit. I don't prefer to eat this any other time of the year. I think that mangoes taste best only when they are in season.

    When mangoes are in season, we have at least one or two mangoes with our lunch as dessert. Apart from eating kilos of mangoes fresh, I like to make this Mango jelly for my daughter. She loves anything pudding or jelly like.

    My husband prefer this Mango Custard to end his weekend biryani meal. And when we have guests, i like to impress them with this two layered Mango Panna cotta and Instant mango mousse.

    About Mango Pudding

    Mango pudding is one of the popular dessert recipe across asian region. It is widely available readymade packaged in convenience stores like 7-Eleven or family marts. This pudding is very popular with the kids as well as adults. It is great to end a meal with this pudding, because it is light and fresh tasting mango pudding.

    Making a delicious mango pudding at home is very easy and quick. All you need is ripe mangoes, sugar, milk, condensed milk and agar agar. Using agar agar to set the pudding makes it vegetarian. Agar agar is known for their health benefits and cooling nature, so this pudding is healthy.

    Mangoes - I used fresh mangoes for this pudding. But if you are craving this pudding when mangoes are out of season. Then try it using canned mango puree or frozen. Use tips mangoes which are in peak of their sweetness. I like to add finely chopped mangoes in the pudding for some texture. 

    Sweetened condensed milk - condensed milk adds to the creamy texture of the pudding and makes it so rich. 

    Sugar - along with condensed milk you need tiny bit of sugar. But if your mangoes are super sweet, you can skip sugar totally. 

    Milk - I prefer a milky mango pudding than pudding made with water. You can use almond milk or soy milk for dairy free option. 

    Agar Agar - to make this pudding entirely vegetarian. I used agar agar which is completely plant based. But you can use gelatine instead of agar agar and I have shared details on how to use it below. 

    Agar-Agar vs Gelatin

    Agar Agar - Agar agar is completely plant based gelatin derived from seaweed. It is a vegan product used in sweets and dessert. Many asian pudding and jelly uses agar agar as main ingredient. You can easily find agar agar powder online. I use this brand of agar agar powder.

    Gelatin - Gelatin or gelatine is a translucent, colorless, flavorless thickening ingredient, derived from collagen taken from animal body parts. Usually it is used to set pudding, jelly and many desserts. This is one of the main ingredient in making gummy bears and candies. 

    Can we use gelatin in mango pudding?

    This recipe for mango pudding is made using agar agar. I used powdered agar agar for easy measurement and convenient. But if you prefer using gelatin, you can easily substitute agar agar with gelatin. The pudding will still turn out great. 

    How to use gelatin in this pudding

    • Take 2 tsp of gelatin in a bowl. Add in ¼ cup of cold water. Mix it really well and set aside for 10 minutes.
    • After 10 minutes the gelatin must have absorbed all the water and bloomed. 
    • Now add the bloomed gelatin in a sauce pan and heat on low heat. The gelatin will melt into a clear liquid.
    • Now proceed with the recipe as usual. 

    Mango Pudding Vegan

    You can easily adapt this mango pudding recipe vegan. Use 1 cup coconut milk instead of ½ cup regular milk. Add ½ cup sugar for ½ cup of sweetened condensed milk. Gently heat the mixture in sauce pan and switch off the flame. Pour into moulds and set in fridge.

    Pudding Moulds

    Puddings can be set in different moulds. It has a tendency to take on the shape of the moulds you use. So use any moulds as per your preference. 

    Steel Moulds - I used mini steel pudding moulds from daiso which is food grade. It is easily available online. The moulds are completely nonstick. The moulds which I used is 2.4 inches in diameter. I prefer to wash the mould with water and pour mixture while the moulds is still wet. I find it to work. 

    Silicon Moulds - Silicon moulds are so easy to use. You don’t have to grease the silicon moulds. Since they are delicate, I suggest you to place the moulds in a baking tray or plate and then pour mixture in it. Silicon moulds are available in different shapes, sizes. Mini silicon cupcake moulds can be used to set puddings. 

    Ramekins - the more basic convenient way to set a pudding is in ceramic ramekins. Depending on the size of the ramekins the setting time will vary. 

    Baking Tray - If you don’t have the patience to fill individual moulds. Pour the pudding mixture in a greased baking tray or any glass dish to set. Once it is set you can slice and serve.

    How to Make Mango Pudding in 4 Easy Steps

    Pre-preparation

    You can start by preparing the moulds. Wash them and place them in a baking tray. If your moulds require greasing, then grease lightly with oil and set aside. Peel ripe mangoes, chop them and puree till smooth. Make sure you finely chop some mangoes for adding in pudding and for garnish.

    Pudding Mixture

    Add all ingredients one after the other into the sauce pan and cook on low heat till all heats up. Thats it, your pudding mixture is done.

    Setting

    Pour mango mixture into individual moulds carefully and chill them in fridge till set.

    Serving

    Check by pressing the top of the pudding moulds. If it seems firm enough, then your pudding is set. Remove the moulds from fridge. To de-mould, gently ease the sides of the pudding from the mould. You can use a butter knife to remove the friction from the pudding and transfer to serving plate. Garnish with finely chopped mangoes and serve immediately.

    Expert Tips

    • Make sure you use ripe sweet mangoes for best taste and colour.
    • Don't add too much agar agar or gelatin which will make the pudding hard.
    • You can place the pudding in freezer to make it set faster.
    • Instead of milk, you can use coconut milk as well.
    • If your mangoes are too sweet, you can skip adding sugar.

    How to Make Mango Pudding (Stepwise Pictures)

    1)Take water in a sauce pan.

    2)Sprinkle powdered agar agar over the water.

    3)Gently heat till the mixture is combined.

    4)Pour in milk and mix well.

    7)Mix this really well and heat gently for 2 to 3 minutes.

    10)take it off the heat and add in chopped mangoes.

    12)Take your pudding moulds or ramekins. I like to place them in a tray for easy transfer. Pour the mango mixture into the pudding moulds. place the moulds in fridge for at least 2 to 3 hours to set.

    Agar agar has to be heated well for activating its setting nature. Using agar agar powder is more convenient and precise than using agar agar strips. Add agar agar to water and heat it completely before adding all ingredients. Make sure your ingredients are hot before pouring into moulds.

    What to do if my pudding is not set properly?

    Fixing a pudding which is not set is easy. Take 1 tsp of agar agar powder in a sauce pan with ¼ cup of water. Heat it till agar agar is completely mixed. Transfer the pudding mixture back into a sauce pan. Heat it for 4 to 5 minutes till it is mixed and heated through. Pour it back into clean pudding moulds and set in fridge.

    Ingredients

    • ¼ cup Water (60 ml)
    • 2 tsp Agar Agar Powder
    • ½ cup Milk (120 ml)
    • 3 tbsp Sugar
    • ½ cup Sweetened Condensed Milk
    • 1 cup Mango puree
    • ½ cup Mango (finely chopped)

    For garnishing

    • Mango (finely chopped)
    • Mint Leaves for garnishing

    Instructions

    • Take water in a sauce pan. Sprinkle agar agar over it. Place the sauce pan on heat and use a whisk to mix it well. Cook this on low heat. The mixture will start to thicken.
    • Now add in milk, sugar and condensed milk. Mix well and heat on very low heat for 2 to 3 minutes.
    • Now add in mango puree and give a good mix. Once mango is combined, take it off the heat and add in chopped mangoes.
    • Take your pudding moulds or ramekins. I like to place them in a tray for easy transfer. Pour the mango mixture into the pudding moulds. place the moulds in fridge for at least 2 to 3 hours to set.

      Thanks for your wishes dear.. Chinagrass & gelatin are the setting agents in this recipe which makes the pudding to set. If you didn't use it you won't get a proper set pudding. I think there is no substitute for this.

      Thanks for your comment. I buy gelatin from a near buy shop, they have their own brand of gelatin, i usually go with that... You can use any brand as you like.

      Please stop using Gelatin. Gelatin has collagen extracted from skin, intestine parts of cows, pigs and even horses. People may mistake this for a vegetarian recipe. Thanks

      Hey Aarthi api, i hv tried ur mango gelatine pudding nd follow exact recipe but it didnt set properly! I had set it on my steel pudding mold! Could u plz tell me why it happened?

      two questions.....1) where to buy gelatin? 2) should I add the sugar, condensed milk and pureed mango when the gelatin dissolved water is still warm or after cooling down the water?
