Ingredients

Ripe mangoes : Fresh and ripe mangoes are the star ingredient of this recipe. It adds the natural flavour, color and sweetness to the ice cream. Blend mango into smooth puree. If fresh mangoes are not available, then use canned or frozen mangoes.
Condensed milk : Condensed milk is added for the sweetness and it makes the ice cream smooth and creamy.
Fresh cream / whipping cream : Since it is an eggless ice cream, whipping cream adds the required fluffiness to the recipe. Use full fat heavy whipping cream for best quality and taste.

Hacks
Chilling is important : Chill your whipping cream or fresh cream and the bowl before whipping. It helps to fluff up better and quicker.
Popsicle : Pour the mango cream mixture into silicone popsicle mould and let it freeze overnight . When serving, unmold the ice cream and dip it in melted chocolate and serve.
Rich color and flavour : Mangoes and saffron go really well together. So, add a pinch of saffron to the mango cream. It gives a natural yellow color without any artificial and also enhances the mango flavour.

Homemade Mango Ice cream Recipe
Equipment
- Beater

Ingredients
- 2 cups Ripe Mangoes peeled & pureed
- 1 cup Sweetened Condensed Milk
- 1 cup Heavy Whipping Cream 240 ml
Instructions
- Take mango puree in a bowl and add in condensed milk to it and mix well.
- Take whipping cream in a bowl and whip it till it is thick and creamy.
- Now add in the mango mix and whip again till it is mixed.
- Now pour this into freezer safe container and freezer for 6 to 8 hours or overnight.
- Scoop and serve.
Notes
- For easy scooping, dip the scooper in hot water and then scoop the frozen mango yogurt.
- Use sweet, ripe and orange coloured mangoes, this will give you good colour.pictures.

Expert Tips
- Make sure to choose fresh and ripe mangoes for best flavour.
- Fold gently the mango puree and whipping cream, don't overmix it.
- To make it nuttier, add some chopped mango, nuts like cashewnut,
- almond or even drizzle and swirl chocolate sauce before freezing for extra flavour and texture.
- Add a pinch of yellow food color or mango essence to boost the flavour and color.
- Cling wrap the container before closing with lid to prevent ice crystal formation.
Serving & Storage
After mixing cream and mango, pour them into a freezer safe container. Before closing with a lid, cover it with a cling wrap to avoid ice crystals on top. Freeze for 6 to 8 hours. Always use a clean and dry spoon for scooping the ice cream. It stays good in the freezer for 1 to 2 weeks.

I made ice cream from this recipe using ready made alfangoe mango pulp. Every time it turned out a topper. I used an old trick i.e. after 3-4 hours I took it out of freezer & whipped it again. I want to know can this recipe be tried on other fresh fruits also, if so do we have to make a few changes? By fresh fruits I mean pine apple. Chikoo. custard apple grapes & black grapes. Please guide. Thanks.
