Mango jello is also known as mango gelatin or mango jelly. Fresh mango puree is mixed with sugar, gelatin, lemon juice and pour into moulds and allowed it to set. This makes a great summer afternoon snack.

Unlike my mango pudding, this doesn't has any milk products like cream, milk or condensed milk added in them. This is made just with mangoes, sugar, lemon juice and gelatin.

How to Make Mango Jello (Stepwise Pictures)

    Making Mango Puree

1)Take ripe mangoes. As you can see here, the mangoes look wrinkly which means they are sweet and ripe. I prefer to use mangoes which has bright yellow pulp like alphonso.

2)Peel the mangoes using a peeler.

3)Once mangoes are peeled, use a sharp knife to cut into pieces. At this point taste the mangoes for sweetness. Depending on the sweetness of mangoes, you have to add in sugar.

4)These mangoes were so sweet and very ripe.

5)Take the mangoes in a blender. Don't add any water when grinding. Make sure the mangoes are properly ground and smooth.

6)This is your mango pulp. Set this aside till use.

    Blooming & Melting Gelatin

7)For setting this jello, I am using gelatin. You can use agar agar powder as well. I have shared a separate recipe for mango jelly using agar agar powder. If you are vegetarians you can refer that recipe.

Before using the gelatin, you have to bloom it in water. Take gelatin in a bowl.

8)Add some cold water into the gelatin. Mix it once and allow the gelatin to sit for 10 minutes to bloom.

9)Now you can see the gelatin has bloomed. The crystals must have become soft in texture.

10)Take the bloomed gelatin in a sauce pan. Cook this on low heat for 2 to 3 minutes till the gelatin melts.

11)Don't over heat the gelatin and boil it. Cook this on low heat till gelatin melts gently.

    Make sugar syrup

12)We are going to make sugar syrup for the jello. Take sugar in a sauce pan. The quantity of sugar depends on the sweetness of the mangoes. So use accordingly.

13)Add some water and cook till the sugar melts completely and gets slightly sticky.

14)Once the sugar is melted, take it off the heat.

    Make Mango Jello Mix

15)Now we are going to make the mango jelly mixture in the sauce pan. Add in all the ingredients into the sauce pan. First add in mango puree, mix the mango puree well into the gelatin.

16)Add in a squeeze of lemon juice.

17)Now add in the melted hot gelatin mixture.

18)Mix this all really well. You can simmer this mixture for few minutes if you want.

    Setting Mango Jello

19)Now pour the jello mixture into moulds. You can pour into individual silicon moulds, ramekins or pudding moulds.

Place this in fridge and allow it to set around 3 to 4 hours or overnight.

20)Gently de mould the pudding into serving plate and enjoy.
