    Self saucing chocolate pudding, a comforting warm chocolate dessert. Chocolate cake batter when baked magically transforms into a chocolate cake with a sticky chocolate sauce. Can you believe that you can make this in less than 2 minutes. This is microwave version, but if you want to make this oven, check my chocolate self saucing pudding which taste amazing with a scoop of vanilla ice cream.

    Self Saucing Chocolate Pudding

    Recently i bought few coffee mugs to add it to my collection so I am making a bunch of microwave mug cakes. Yesterday few relatives and their kids dropped by, so I made few microwave mug cakes and brownies for them and they devoured it in a second.

    About Chocolate Self Saucing Pudding

    Microwave cakes are so versatile, it can satisfy any sweet cravings at any time of the day even in mid night. Since this cake takes under 5 minutes to make from start to finish. This is a base recipe, you can customize it as per your liking. You can add nuts, dried fruits in it to make it more tasty. Like my Butterscotch Self Saucing Pudding

    This dessert is called as chocolate self saucing pudding. It is a chocolate cake batter which transforms magically into a chocolate cake with a sticky chocolate sauce. The self saucing chocolate pudding is eggless and makes a rich chocolate pudding. Even though it is called as chocolate pudding, it is very different from traditional chocolate pudding.

    The self saucing sauce is made by the topping which is added over the cake batter like cocoa powder, brown sugar and hot water. These three when baked cooks together to create a thick sticky sauce.

    This would seriously become an addictive recipe. It is super delicious, it needs just basic ingredients to make which you have already in your pantry. You can top it with whipped cream, vanilla ice cream.

    Microwave Chocolate Pudding Ingredients

    Plain Flour - I used AP flour also known as refined flour or maida for making the baked chocolate pudding. You can use whole wheat flour instead of maida.

    Sugar - I used sugar for the cake batter and brown sugar for creating sticky sauce.

    Cocoa Powder - use finest quality cocoa powder for making cake batter. Better the cocoa quality the more intense the cake taste.

    Baking Powder - baking powder adds a touch of lift and light texture to the cake.

    Oil - I used flavourless oil for the cake. You can use refined oil or canola oil. But for better flavour you can use melted butter.

    Milk - You can use milk into the flour mix. If you want this to be dairy free, you can use any nut milk like soy milk, almond milk or oat milk.

    Self Saucing Sauce Ingredients

    For Self Saucing Sauce - for the sticky sauce, sprinkle top of the cake with cocoa powder, brown sugar and hot water. This is cooked in microwave to create a sticky sauce.

    Self saucing sauce is a created by a combination of cocoa powder, brown sugar and hot water. If you prefer more sticky sauce, you can double up the sauce ingredients which creates a pool of sticky sauce. But the ratio which I have mentioned is perfect.

    How to make best self saucing chocolate pudding in microwave

    This is an eggless version of self saucing pudding. It is a single serving (or serves 2) chocolate pudding. For getting the perfect sauce, sprinkle top with cocoa, brown sugar, hot water and microwave for the mentioned time. Don't over bake else it will get dry. But you can under bake for more sticky topping.

    How to Make Self Saucing Chocolate Pudding (Stepwise Pictures)

    Mix Dry Ingredients

    1)Take plain flour in a bowl. You can use wheat flour instead of plain flour.

    2)Add in sugar to the plain flour. You will be adding more sugar on top for the sauce.

    3)add in cocoa powder over the flour and sugar. Use good quality cocoa powder which adds intense chocolate flavour to the cake.

    Pro Tip: Optionally You can add ¼ to ½ tsp of instant coffee powder in this for intense chocolaty flavour.

    4)Add in baking powder into the dry ingredients.

    5)Mix well this is your dry ingredients.

    Make Chocolate Batter

    6)Add in milk into the flour mix. If you want this to be dairy free, you can use any nut milk like soy milk, almond milk or oat milk.

    7)Add in oil into the flour. Instead of oil you can use melted butter for better flavour.

    8)Add a splash of vanilla extract.

    9)Mix well to a smooth batter. Don't over mix, just mix to combine.

    Make Chocolate Sauce

    10)Now pour this in a greased microwave safe bowl. You can use a ceramic bowl or ramekins.

    11)Sprinkle top with cocoa powder. This will create the chocolate sauce once microwaved.

    12)Sprinkle with brown sugar. I used powdered jaggery.

    13)Pour over hot water carefully. Don't worry when microwaved, this will create a luscious sauce.

    Cooking Self Saucing Pudding

    14)Place the bowl carefully into the microwave. Cook on high power for 1 min to 1.30 minutes. Depending on your microwave watts the timing will vary. My microwave is 800 watts, it took me 1.30 minutes.

    Once baked remove the bowl carefully from oven using oven mitts since it will be super hot. Let the cake rest for 2 minutes so the sauce separates and settles.

    15)Serve self saucing pudding hot with some whipped cream or ice cream.

    Can I use wheat flour instead of plain flour

    This is the question which I used to get in every baking recipe of mine. So I tried this recipe using wheat flour and you couldn't find any difference. It was delicious and decadent. So instead of using plain flour you can use whole wheat flour. Baking time and measurements remain same.

    • Depending on your microwave watts the cooking time will vary. My microwave is 800 watts and it took me 1.30 minutes. If your microwave watts is high it will cook faster may be 1 minute, so keep an eye on it. 
    • Use microwave safe ceramic or glass bowl for making this pudding. it is best to use a wide bowl or ramekin to make this for the perfect texture.
    • Use best quality cocoa powder for intense chocolate flavour.
    • A pinch of instant coffee powder or instant espresso can be added, it will make the chocolate more intense.
    • Use flavourless oil like refined oil, for better flavour use melted butter. 
    • Hot pudding taste amazing with whipped cream or vanilla ice cream.

    Equipment

    • Microwave Safe Bowl or Ramekin

    Ingredients

    For Chocolate Cake

    • 3 tbsp All Purpose Flour | Maida
    • 3 tbsp Sugar
    • 1½ tbsp Cocoa Powder
    • ½ tsp Baking Powder
    • 3 tbsp Milk
    • 1½ tbsp Oil or Melted Butter
    • ½ tsp Vanilla Extract

    For Self Saucing Chocolate Sauce

    • 2 tsp Cocoa Powder
    • 2 tbsp Brown Sugar
    • 3 tbsp Hot Water

    Instructions

    • Take flour, sugar, cocoa, baking powder, milk, vanilla, oil in a bowl and mix well to a thick batter. Spoon this in a microwave safe bowl.
    • Now to make the sauce. Sprinkle top with brown sugar and cocoa powder. Pour some hot water over it and pop it in microwave and Cook it on high power for 1 to 1 ½ mins. My microwave is 800 watts. So depending on your microwave watts the timing will vary.
    • Remove from microwave and let it sit for 2 minutes and serve with ice cream or whipped cream.

        I just tried this but doubled the recipie for a late night cake for the hubby and I. It was amazing!! The gooey pudding was deliciously caramel toffee like, and the cake was moist and delectable! I am saving this recipe for sure!

      This is absolutely delish! I love to bake (and eat!) choc self saucing puddings, but waiting for it to bake in the oven is annoying if you want it NOW! This is a quick and yummy solution. Couldn’t believe it tasted so good, (even without an egg). I added some choc chips to the batter too. Be careful not to overfil your mug as it rises a lot. The only problem is it doesn’t specify the the quantity of cocoa to sprinkle on the top for the sauce, I had to guesstimate.

        Jess, I think that was the 1 tsp cocoa, where the ingredients say "1½ Tbs + 1 tsp". I was caught out by that too.

        I found the quantity was enough for 2 portions! The bowl/mug needs to be minimum 20 fl oz.

        Hey. I'm not the author or anything but maybe try again and double check you did follow the recipe. Mine tastes the same as what you're describing but I realised halfway through eating it that I had forgotten to add the milk. I know you said in your comment you followed the recipe to a tee but I thought the same thing until I realised I had forgotten milk.

      Oven broke down before supper So I thought I would try this microwave dessert. Being diabetic, there is way too much sugar in this recipe so I only used 1T sugar and sprinkled a bit of brown sugar on the top. It turned out great! Still a lot of sugar for me but I don’t indulge that often. The Vanilla ice cream is a must ,just added the perfect touch.

      I made this last night, with a couple of changes. I doubled the recipe and cooked it in a large heavy plastic bowl, to make 2 large or 4 small servings. I cooked it about 10-20 seconds too long because it ended up not having as much pudding as I hoped it would. It was still really good and super moist and I put freshly whipped cream on it. Yum, yum! Next time I will decrease the sugar because it seemed really sweet. I should also point out that I made it keto, so that could be why it seemed too sweet. And I used to make this a lot years ago, in the oven and it was amazing! Still can’t figure out how it makes pudding! Overall: highly recommend!

      This was really good. I don’t bother using flour and baking powder. I use pancake mix. It’s got everything in it already. All I have to add is the sugar in the cocoa and milk and oil and espresso powder. It only took one minute in my microwave and it is decadent it is delicious. Thank you so much.

      Delicious and super chocolatey! I doubled the quantity and cooking time to make enough for 2 but there is still plenty left over. Makes a very generous serving. I added half a tsp coffee granules because I had them <3
