    Kerala Style Egg Curry Recipe

    I made this some days ago and served it with coconut milk aapam. The combination was so good. This one is a little spicy gravy which is perfect with aapam or dosa or idlis..I made some slashes in the eggs so the juice can go deep inside the eggs.

    A hot egg curry known as Kerala Style Egg Curry (Mutta Curry) is a staple in Keralan households. Coconut milk can be used or not in its preparation. Serve it with rice or appam for a filling meal. Eggs were cooked in a hot onion-tomato gravy, both boiled and roasted.

    The exotic flavour of the Garam masala and spice powders is complemented by the sweetness of the onion and tomatoes. The dish becomes tastier the more onions there are in it. Every spoonful of rice and curry leaves the tongue with a wonderful blend of sweetness and heat.

    Egg :

    Raw eggs have a fairly bland flavour, but those who are more sensitive to them may find them overpowering. Because egg yolks are mostly fats, they have a buttery flavour, are very creamy, and have a smooth mouthfeel.

    Onion:

    Onions are considered a basic ingredient or the foundation of Indian cooking and are used to make any gravy, curry, or bhuna dish. The flavour and aroma of onion transforms any ordinary dish into a mouthwatering and delectable one.


    Tomatoes:

    Tomato flavour is frequently described as sweet, tart, tangy, or well- balanced. Tomato flavour is also known as classic tomato flavour or old-fashioned tomato flavour; in some cases. Some tomatoes are described as having a mild or bland flavour.

    Ingredients
      

    • Eggs - 6 hardboiled and peeled make some slashes in it
    • Coconut Oil - 3 tblspn
    • Onion - 1 large finely chopped
    • Ginger Garlic paste - 1 tblspn
    • Coriander leaves / Cilantro - 3 tblspn finely chopped
    • Tomato - 2 pureed
    • Salt to taste
    • Sugar - 1 tsp
    • Whole Spices:
    • Fennel Seeds / Sombu / Saunf - 1 tsp
    • Dry Red Chilli - 2
    • Curry leaves - 1 spring
    • Spice powders:
    • Chilli powder- 1 tsp
    • Coriander powder / Malli podi - 1 tblspn
    • Cumin powder / Jeera podi -1 tsp
    • Pepper Powder - 1 tsp
    • Turmeric powder/ manal podi -1 tsp
    • Garam Masala powder - 1 tsp

    Instructions
     

    • Heat coconut oil in a kadai. Add all the whole spices and Saute for 30 sec.
    • Add in onions and ginger garlic paste and mix well. Cook this for few minutes.
    • Add in tomato puree and mix well Cook this till oil separates.
    • Now add in all the spice powders, salt and sugar and mix well. Cook this for a min.
    • Now pour some water and bring this to a boil.
    • Add in cooked eggs and simmer for 10 mins.
    • Throw in coriander leaves and mix well.
    • Serve with appam or dosa or roti.

      Awesome curry. I didn't add much water, as my tomatoes were very juicy. It was excellent, we always love your egg curries. It's a pity we couldn't have dosa with this, only naans, because I bough a ready-made dosa mix and it was awful.
