Spicy Chicken Biryani + Tips to Avoid Whole Spices Catching in Mouth

 Last weekend I made Briyani with Chicken…I have tried making briyani many times,Each time there will be something missing in it.But last time I made the perfect briyani,After I finished making it I was so proud of myself,Yes …the Briyani Aroma filled my house.That should happen only when you make the perfect briyani.I wrapped the Whole garam masala ingrediants in a cheese cloth so that you will get the flavours of it but wont get a bite into it (which was awful).I mixed the rice along with the masala so that the Briyani was so flavourful.I served it with Onion Tomato Raita(for recipe check this link)So please give it a try and let me know how it turned out.


Ingrediants:
Basmati Rice-2 cups
Chicken -1/2 kg
Onion-2 large thinly sliced
Tomato-1
Green chilli-4 slitted
Coriander Leaves-1 cup
Mint leaves-1 cup
Curd-1 cup
Red chilli powder-1 tblspn
Garam Masala powder-1 tblspn
Turmeric Powder- ½ tsp
Cumin seeds- 1 tsp
Whole Garam Masala-1 tbspn
Salt to taste
Cashew-10 pieces
Raisans-2 tblspn
Oil-2 tblspn
Ghee-1 tblspn
Method:
Soak the rice for around 30 min,Then drain it and set aside.
Take a muslin cloth add all the garam masala ingredients and tie it.
In a pressure cooker heat oil and ghee,crackle some cumin seeds and bay leaf.Add in the onion and fry on a low heat till brown.
Add in the green chilli and also the chicken pieces and sear the meat till it is no longer pink.
Add in the Tomatoes,Red chilli,Tumeric and Garam masala powder and stir well.
Add in the coriander and mint leaves and mix well,pour in the curd and mix well.
Add in the soaked Basmati rice and combine well.Pour in the water(For 1 cup rice add 2 cups water) and season with some salt and mix well.Put in the spice bag that we made earlier and bring every thing to a good boil.
Reduce the flame and cover the pressure cooker and cook it for 20-25 min.
When ready don’t forget to remove the spice bag and garnish with Fried Cashew and Raisans and sprinkle some coriander leaves.
Serve it with Onion and Tomato Raita.

    Biryani looks very nice.. But whistle is not required ah ? just covering and cooking is enough ?

    @Anonymous

    If you are using whistle, you can cook it for 2 whistle and simmer for 10 mins. Or cover the pan and cook for 20-25 mins on low flame..

    I really like the briyani recipe. Looks abit simple compared to others. Can you please tell me what are the items that is in the whole garam masala ingredients.

    I made this last weekend, and with some curry we had enough food for three dinners (when it's so hot, it's good to do less cooking, right?). The only thing I didn't like was that the rice turned all mushy. I added 2 cups of water per 1 cup rice, and I simmered the whole thing for 20 minutes. It tasted good, but it was very mushy and sticky. I had a similar problem with the vegetable briyani. Maybe the sort of rice they sell over here should be cooked shorter? I'll need to experiment.

    The whole garam masala spices you mentioned in the spice bag were cinnamon, cloves, cardamom and bay leaf. But in the pic there are cinnamon, cloves, cardamom and i guess the others are pepper and annasi poo. Can you clarify that? And also you have added bay leaf along with cumin but you haven't mentioned that. Just want the right things so that i too ll get a perfect biryani 🙂 Thanks in advance.

    @Anonymous U should add cinnamon,cloves,cardamom,staranise,annasipoo,pepper. And you have to add cumin and bay leaf in oil..

    I added a half piece of maggy chicken cube while cooking the rice. It added much more flavour and this became the best biriyani I ever tasted! 🙂

    Hai aarthi, I need to clarify about the amount of water u are using.. Here u used 2 cups and in the other pressure cooker Biriyani recipe with same ingredients, u added 3 cups.. Please tell me why .. I really want to make this biriyani ASAP…

    @AnonymousThis is my old post, i used to use 2 cup water for 1 cup rice. Later i use 1.5 cup for 1 cup of rice. I suggest u to use 1.5 cup of water for 1 cup rice.

    Hai, Recepie sounds to good.but is it necessary to cook chicken along with rice?
    What about if we cook chicken with all spices separately and mix it with cooked rice finally.plz reply
