Spicy Chukka Chicken Recipe / Chicken Chukka Roast Recipe


This is one dish which i made few months back and almost forgot about it, it was sitting in my draft for so many days. Finally i got a chance to look into it and i am sharing it immediately.

Preparation Time : 10 mins
Marinating Time : 1 hour
Cooking Time : 45 mins
Serves : 3 to 4

Ingredients:

Chicken - 500 grams
Oil - 4 to 5 tblspn
Onion - 500 grams sliced thinly
Salt to taste
Coriander leaves a handful finely chopped

Dry Masala:
Dry Red Chillies -3 to 4
Coriander Seeds - 2 tblspn
Cinnamon / Pattai - 3 cm piece
Cardamom / Yelakai - 4
Clovers / Krambu - 4
Cumin Seeds / Jeerakam - 1 tsp
Kashmiri Chilli Powder - 2 tsp

Wet Masala:
Coriander Leaves a - 1 cup
Green Chilli - 1
Ginger Garlic Paste - 1 tblspn

Method:

Take all dry spices in a blender and powder them finely. Set aside.

Take all wet masala in the same blender and add water to puree till smooth. Set aside

Take chicken in a bowl, add the dry masala, wet masala, salt and mix well. Leave it to marinate for 1 hour.

Heat oil in a kadai. Add in onions and saute till golden.

Now add in chicken and toss well in the oil. Cover and cook on a low heat for 15 mins, now the water from the chicken will come out. Cover again and cook on low heat for another 15 mins.

Now increase the heat and cook till the water is evaporated and chicken is done.

Add in coriander leaves and toss well.

Serve.

You will need, dry red chillies, cumin, cinnamon, cloves, cardamom and coriander seeds


Take them in a blender and add in some kashmiri
chilli powder for colour


Powder them...This is the dry masala


Now lets make the wet masala..Take coriander leaves
 in a mixer


Add in ginger garlic paste


add in green chillies


Puree them well..This is the wet masala


Now take your other ingredients


Take chicken in a bowl


add in dry spices


and the wet spices


add in salt


Mix well and leave this to marinate for an hour


Heat oil in a kadai


Add in onions


Cook till golden


Add in chicken 


Mix well


Cover and simmer


This is how it looks after 15 mins


Cover and cook again for 15 mins


Now increase the heat and roast them till dry


Add coriander leaves


Toss well


Serve

    I tried this recipe and it came out well. I felt the eliachi gives a sweet flavour and dominates the dish. I didnt put 4 eliachi but added only 2.
