    Baby Corn 65 Recipe, a tasty, crispy addictive starter or appetizer made with fresh baby corn. Cooked baby corn is tossed in spices, ginger, garlic, lemon juice, plain flour, corn starch coating and fried till crispy which is similar to my golden fried baby corn. You can choose to deep fry, shallow fry, bake or air fry baby corn, all details are provided below. Learn how to make baby corn 65 with step by step pictures and video.

    Our usual vegetarian appetizer order in a restaurant would be gobi 65. But this is one recipe which I tried it few days back and loved it. The baby corn tasted crispy and since I fried it in a tawa it is healthy.

    What is a Baby Corn?

    Baby corn (also known as young corn or baby sweetcorn) is a grain taken from corn. It is harvested early stage while the corn stalks is still small and immature. These are usually used in making salads, appetizers and other recipes.

    Baby corn can be consumed whole when it is still young. If the corn matures the inner core gets tough which makes it inedible.

    About Baby Corn 65

    Baby corn 65 is a popular vegetarian appetizer or snack recipe. It is equally popular like soya chunks 65, gobi 65, broccoli 65 and paneer 65. It is made with baby corn, spice powders of choice, ginger, garlic, flour.

    Even though Baby corn is tender, it can take some time to cook. So whenever I make appetizer using it, I like to precook it before frying. I usually cut them into rounds, marinate them and pan fry them till golden brown.

    You can deep fry baby corn 65 or take the healthy option of pan frying with less oil or air frying. Methods for baking is given below.

    Baby Corn 65 Ingredients

    Tender Baby Corn - try to choose fresh firm baby corn for making 65. Tender corn cooks faster and adds a sweet taste when fried. Make sure you cut baby corn into small pieces so each piece is coated well with the masala and stays crunchy when fried.

    Spice powders - a combination of kashmiri chilli powder, garam masala powder and salt is used in the marination. You can use turmeric, cumin powder, chaat masala powder or amchoor powder too.

    Flour Mixture - I used a combination of plain flour, rice flour, cornstarch for coating 65 which gives a crunchy exterior when fried.

    Ginger & Garlic- use freshly minced ginger and garlic to marinate baby corn which helps with the flavour.

    Lemon Juice - I always use lemon juice or vinegar in the marination of 65 which adds a tangy flavour to the baby corn.

    Oil - for frying use canola oil, refined oil or sunflower oil.

    5 Ways of Cooking Baby Corn 65

    Deep Frying - this is the best way of making baby corn 65. It results in crispy crunchy end result and it stays crispy longer. Use neutral oil for frying and always deep fry with caution.

    Shallow Frying - shallow frying is done in a skillet with less oil. In my opinion you can opt for deep frying that shallow frying because when things are shallow fried it absorbs more oil than when it is deep fried.

    Pan Frying - this is the method which I used in this recipe. I used 3 tbsp of oil in a cast iron tawa. I cooked my baby corn in the tawa on medium heat. This method needs constant attention and constant flipping of the baby corn to achieve the crispy texture.

    Baking - Preheat oven to 200 degree C. Spread marinated baby corn in a baking tray, drizzle with some oil to coat. Bake it in the preheated oven for 10 to 12 minutes till golden and crispy.

    Air Frying - Place the marinated baby corn inside air fryer basket. Place it into a 180 degree C air fryer and bake for 15 minutes till crispy.

    How to Make Baby Corn 65 (Stepwise Pictures)

    Cooking Baby Corn

    1)Take baby corn and peel off the outer husk and wash it really well. Nowadays peeled baby corn is also available in the market.

    2)Cut baby corn into small pieces. You can slit them in the middle lengthwise. That makes it look like a french fry.

    3)Take baby corn in a sauce pan or kadai.

    4)Cover the baby corn with water.

    5)Add in salt and mix well.

    6)Cook baby corn till tender. It will take around 8 to 10 minutes. Instead of cooking this in a sauce pan, you can pressure cook it for 1 whistle.

    7)Strain the cooked baby corn in a sieve to remove the excess water.

    Marinate Baby Corn

    8)Take cooked baby corn in a bowl. Now we are going to do a simple marination and coating for the baby corn.

    9)Add in ginger garlic paste. Instead of using paste, you can add in crushed ginger and garlic as well.

    10)Add in chilli powder, garam masala powder and salt. I used kashmiri chilli powder which gave a bright red colour. You can use any other spices that you prefer.

    11)Add in lemon juice or vinegar to taste. This adds a tangy taste to the baby corn 65.

    Coating for Baby Corn 65

    12)Add in plain flour. If you want to use wheat flour, you can skip plain flour and use wheat flour instead.

    13)Add in cornstarch. If you don't have cornstarch, you can add more rice flour instead.

    14)Add in rice flour. Rice flour helps with the crispy texture in baby corn 65.

    15)Add in little water at a time and mix well.

    16)The mixture should be thick like this. So don't add too much water. Just sprinkle and mix.

    Pan frying baby corn 65

    17)You can deep fry baby corn 65. But I cooked it in a tawa with little oil. You can bake or air fry the baby corn 65. Check below for details on how to air fry.

    18)Cook on low heat till baby corn 65 gets golden brown and crispy. Keep mixing it using a spatula for even cooking.

    19)Strain the fried baby corn 65 in some paper towel. Sprinkle with some chaat masala powder.

    20)Serve hot.

    21)Enjoy gobi 65 hot with ketchup.

    • I chopped my baby corn, you can slit them lengthwise like a french fry.
    • Any spice mix combo can be used to flavour this dish.
    • You can deep fry baby corn in oil for maximum crispy texture.
    • Marinated baby corn can be stored in fridge upto 2 days and fried when needed.
    • Instead of boiling corn in a sauce pan, you can pressure cook for 1 whistle.

    Equipment

    • Cooking pot

    • Mixing Bowl
    • Sieve or Colander

    Ingredients

    • 10 no Baby Corn chopped
    • 1 tsp Salt
    • 3 tbsp Oil
    • 2 tbsp Water

    For Baby Corn 65 Coating

    • 2 tsp Ginger Garlic Paste
    • 2 tsp Kashmiri Chilli Powder
    • 1 tsp Garam Masala Powder
    • 1 tbsp Rice Flour
    • 1 tbsp All Purpose Flour
    • 1 tbsp Cornstarch
    • 1 tsp Lemon Juice or Vinegar
    • Salt to taste
    • 1 tsp Chaat Masala for Sprinkling

    Instructions

    • Take chopped baby corn in a sauce pan, add in salt and water. Cook till tender and cooked. It will take around 8 to 10 minutes. Strain them in a colander. Set aside.
    • Take cooked baby corn in a bowl. Now add in all the masala ingredients in and mix well.
    • Pan fry them in a tawa with little oil or deep fry them. Strain on some paper towel. Sprinkle chat masala over and serve hot.
