    Caramel bread pudding is a steamed pudding recipe made with bread slices, sugar, eggs, milk, vanilla and sweetened condensed milk. The pudding is easy to make and taste absolutely decadent which is similar to bread pudding, eggless bread pudding and no bake bread pudding.     Easy Caramel Bread Pudding Recipe. Delicious and such an easy pudding which taste so yummy. It is one of the best desert you can make with bread. This is great for summer time, since kids love pudding. This pudding is made using bread and eggs which gives perfect silky pudding like texture.

    I have been eyeing on this recipe for a long time. And some of my viewers have been asking for bread caramel custard recipe. So finally i decided to give it a try and it was a total success. My little daughter loved it so much and finished this entire portion all by herself.

    About Caramel Bread Pudding

    Bread pudding is a bread-based custard dessert that is popular in many cuisines around the world. Puddings are specially most loved dessert in Europe and Britain. Traditional bread pudding is made layering bread and custard in a baking dish and cooking together till the custard and bread pudding is set.

    This bread pudding is a different version and is made with bread, milk or cream, eggs and a variety of other ingredients depending on whether the pudding is sweet or savoury.

    Bread is blended with sugar, milk, eggs, condensed milk and vanilla. The bread custard is poured over caramel and steamed. The steamed pudding is allowed to set in fridge before slicing and serving.

    Caramel Bread Pudding Ingredients

    Eggs - Egg helps making the pudding to set and have a buttery flavour on its own to create creamy, and have a smooth mouthfeel.

    Bread Slices - I use white bread slices for making this steamed pudding.

    Sweetened Condensed Milk - Sweetened condensed milk is added in the pudding to create creamy caramel-like pudding that can be used in a variety of dessert recipes. Its delicious on its own, with ice cream, in coffee, or spread on apple slices.

    Sugar - pudding is sweetened with a addition of sweetened condensed milk and sugar.

    Milk - Milk is added to hydrate the dry ingredients, adds flavour, aids browning, and softens texture.

    Vanilla Extract - a dash of vanilla is added in the custard to give intense aroma to the pudding.

    How to Bake this Caramel Pudding in Oven?

    I got many comments asking, how to bake this in oven instead of steaming. So here is how you bake this in oven. You can bake it in an OTG or in convection oven.

    Once you pour the custard in the mould. Cover with foil. Place it in a large baking pan. Fill it half way through the baking pan with boiling hot water. Place it inside a 180 degree C oven and bake for 45 to 50 minutes.

    Now remove the mould from oven, place it in fridge to set. Now gently de mould, slice and serve.

    How to Make Caramel Bread Pudding (Stepwise Pictures)

    Preparing Pan

    1)For making this caramel bread pudding, I am using metal baking pan. I am using aluminium cake pan because I am cooking caramel in the baking pan.

    First slightly grease the round cake pan with ghee or butter.

    Making Caramel

    2)Sprinkle some sugar in the cake pan.

    3)Place the cake pan over low medium heat and cook till sugar melts and caramelizes. use a pair of tongs to swirl the pan gently so the caramel coats the pan.

    4)Now the sugar is caramelized. Remove it from the stove and set aside so the caramel hardens.

    Making Bread Custard

    5)Take some bread slices and cut it into cubes. I used 2 slices of bread. Got around 1 large cup of bread cubes.

    Pro Tip: I didn't remove the crust from the bread. But you can remove the crust if you want.

    6)Add the bread slices in the blender.

    7)In the same cup, measure 1 cup of milk. Pour it into the blender.

    8)Add in 2 eggs into the blender.

    9)Add a dash of vanilla extract. If you want, you can use ground cardamom instead of vanilla.

    10)Add in sugar into the blender.

    11)Pour in sweetened condensed milk. This is optional, you can skip condensed milk if you want.

    12)Now blend this together so the custard is well blended and looks smooth.

    Steaming Custard

    13)Pour the custard in the caramel lined baking pan.

    14)Cover the pan with plastic wrap or foil.

    15)Place the pan in steamer and cook for 40 to 45 minutes till the pudding is cooked completely.

    16)Remove the pan from steamer. Insert a knife in the centre to check whether the pudding is cooked or not.

    Allow the pudding to cool completely. Place the pudding in fridge to set for few hours.

    Serving

    17)Un mould the pudding.

    18)Slice and serve.

    Expert Tips

    • You can add more or less sugar depending on the sweetness you want.
    • Instead of making caramel straight in the metal pan. You can make the caramel in separate frying pan and pour it in the baking pan.
    • Make sure you cover the pan tightly with foil before steaming for even steaming. 
    • Allow the cake pan to cool down completely before pudding in fridge. Also chill the pudding for few hours before demoulding.

    Equipment

    • Blender

    Ingredients

    • 2 slices Bread Slices around 1 cup cubed
    • 1 cup Milk 240 ml
    • 3 tbsp Sugar
    • ¼ cup Sweetened Condensed Milk
    • 2 large Eggs
    • 2 tsp Vanilla Extract

    For Making Caramel

    • ¼ cup Sugar for caramel
    • 2 tsp Ghee or Butter

    Instructions

    • Take a baking pan, grease with some ghee. Sprinkle some sugar over it and place it over heat. Cook till your get nice caramel colour. Dont burn the sugar. Remove the pan from stove. Now let it cool for few minutes.
    • Take bread, milk, sugar, condensed milk, eggs and vanilla in a blender and puree till smooth. Pour the prepared custard into the tin.
    • Cover the pan with foil or plastic wrap and place it in a steamer and cook for 40 to 45 mins. Remove it and insert a knife to check whether the cake is done or not. Now pop the pan in fridge and let it chill for 2 hours. Slice and serve.

      Thank for this yummy recipe. Have few silly doubts.could you please clarify. Do we need to take out the bread side part?.Do we need to steam in Idly cooker or just open vessel with water?can you please tell me if we can bake in oven with the time and temperature for it and preheat temp.
