Egg Rice / Tomato Flavoured Masala Rice with Spiced Up Eggs – Leftover Rice Ideas / Lunch Box Ideas

This rice can be made within 20 mins..But it has full of flavour, I love it with some onion raita and my lunch will get filled..This is  a great recipe to put in lunch box…Kids will love it…Since the egg is spiced first it has some flavour too instead of bland plain eggs..

This is a great recipe to use leftover rice from the previous batch..You can add any vegetables in this like corn, capsicum, peas and anything..
Hope  you like it and let me know what you think..I am sending this recipe to BM Day 3 under the theme Seven Days of Rice…
Ingrediants:
Rice – 2 cups cooked (any rice)
Onion – 1 sliced
Tomato – 3 chopped
Green Chilli – 2 slit
Cumin Seeds / Jeerakam – 1 tsp
Fennel Seeds / Sombu / Saunf – 1 tsp
Coriander Powder / Malli Podi – 1 tblspn
Chilli Powder – 1 tsp
Salt to taste
 Oil- 3 tblspn
For Spicy Eggs:
Eggs – 4 boiled and cut in half
Chilli powder – ½ tsp
Coriander powder / Malli Podi – 1 tsp
Salt a pinch
Method:
Heat 1 tblspn oil in a kadai. Mix eggs with chilli powder, coriander powder and salt. Drop this in oil and fry it for 2 mins. Remove this to a bowl and set aside.
Now in the remaining oil add the cumin and fennel seeds and mix well. Add in onion, green chilli and for for 3 mins.
Add in salt, chilli powder, coriander powder and mix well.
Add in tomatoes and mix well. Cookf or 5 mins till the tomatoes turn mushy.
Add in cooked rice and toss well. Fry for 5 mins.
Now add the fried eggs on top of the rice and cover with a lid and simmer for 5 mins.
serve with raita.

Take all your ingrediants
Slice the eggs
add spices
and toss well
heat oil
add eggs
and fry a little
remove and set aside
in the same oil..Add cumin and fennel
add onion and chillies
add some salt
chilli and coriander powder
saute well
add tomatoes
and mix well
cook till everything turn mushy
add rice
and mix well
add eggs
cover and simmer
untill everything is cooked
Serve
Serve with raita
