Pumpkin Chocolate Chip Muffins – Halloween Special Recipes

Hope everyone had a
great weekend. I had a beautiful baking weekend, I got two orders one is a Pineapple upside down cake
and another one is my favorite Devils food cake.  I was busy in doing stuffs for that and got
it delivered on time. Then had a quick weekend shopping.

Now coming to the
recipe, this is my next recipe for the halloween. A chocolate filled pumpkin
muffins , these are beautiful muffins which has chocolate chips scattered all
over it. They turned out so moist and fluffy and was so rich. I took few
muffins to office and everyone loved it a lot.

I hope you will try
it and let me know how it turned out.

Makes – 12 Muffins

Ingredients:
All Purpose Flour /
Maida  – 1 cup
Baking Soda – 3/4
tsp
Baking powder – 1
tsp
Cinnamon – 1 tsp
Ground Dry Ginger-
1/4 tsp
Salt – 1/4 tsp
Pumpkin Puree – 3/4
cup ( Click here for recipe)
Oil – 1/2 cup
Sugar – 1 cup
Chocolate Chips – 1
cup + extra for sprinkling on top of muffins
Egg – 1
Vanilla Essence – 1
tsp
Water – 1/4 cup
Method:
Preheat the oven to
180 Degree C / 360 Degree F. Line your muffin tin with cupcake liners.
Take flour, baking
powder, baking soda, cinnamon, salt in a bowl and mix well. Set this aside.
Take a bowl. Add in
oil, sugar and egg. Beat well till they are mixed.
Now add in vanilla
and beat again.
Now add in the
pumpkin puree, water and mix well.
Add the dried
ingredients and beat well. Don’t over mix the batter.
Add the chocolate
chips and using a spatula fold them in.
Now using a icecream
scoop, spoon equal amount of batter into the muffin cases.
Sprinkle some
chocolate chips on top of the muffins.
Bake them in the
oven for 20-25 mins till they are golden. Use a tooth pick and insert them into
the muffin, if they come clean they are ready.
Remove them from
oven and let them cool completely before removing from the cases.
Serve warm or at
room temp.

Take all your ingredients
Take flour in a bowl
add all the dry ingredients into it
and mix well..
Take egg, sugar and oil in a bowl..
and beat them till they are mixed
add in vanilla
add pumpkin puree
now goes water
and mix well
now add the mixed ingredients
and mix well
give everything a final stir
add chocolate chips to it
and mix well
Now line your muffin tin cupcake cases
use a icecream scoop to take the batter
Scoop them into the cases
sprinkle some chocolate chips over them
All Beautifully baked
Remove and Serve
