Vegetarian Spinach & Mushroom Lasagna Recipe - Mushroom Lasagna Recipe - Spinach Lasagna Recipe

Lasagna is one of the most requested recipe in yummy tummy, the reason why it took me this long is because I know that if i have to post that recipe, it should be using homemade lasagna sheet recipe..I fixed the day today and started the work in the morning itself. I made a batch of vegan homemade pasta and lasagna sheets and made this delicious lasagna..

I also made a batch of vegetable lasagna..Will share that soon. And i will soon make a traditional egg lasagna sheet and share some non veg version of this..This spinach, mushroom and cheese lasagna is a classic combination and it worked pretty great. The taste was awesome..

Preparation Time : 15 mins

Cooking Time : 15 to 20 mins
Baking Time : 45 to 50 mins
Serves : 4


Lasagna Sheets - 10 to 12 ( I used homemade, cook it first)

Cheese - 1/2 cup grated ( i used mozarella)
Parsley finely chopped as needed

For Filling:

Butter - 1 tblspn
Garlic - 5 cloves chopped finely
Onions - 1 medium size chopped finely
Mushrooms - 200 grams chopped finely
Spinach - 3 cups chopped finely
Salt to taste
Red Chilli Flakes - 1 tsp
Italian Seasoning - 1 tsp
Water - 1/2 cup

For White Sauce:

Butter - 4 tblspn
All Purpose Flour / Maida - 4 tblspn
Milk - 1/2 liter
Salt to taste
Pepper or Red Chilli flakes to taste
Cheese - 1 cup grated ( i used mozarella)


Start by cooking lasagna, boil lots of water, add salt and drop pasta in boiling water and cook for 3 to 4 mins. Drain it lay it in a plate.

Start by making the filling. Heat butter in a pan, add in garlic and onions. Saute for a min.

Add in mushrooms and give a quick toss, add in spinach and saute till it wilts and raw smell leaves from it.

Add in salt, red chilli flakes and italian seasoning. Give a mix. Add in water and bring it to a boil. Set aside.

Now make the white sauce. Heat butter and flour in a pan and mix well for 2 mins or so. Add in milk slowly and keep whisking so no lumps are formed. Now keep whisking till it get thick.

Add in salt, pepper or chilli flakes and cheese. Mix well Sauce done.

Preheat oven to 180 degree C.

Now take the baking pan and spoon some spinach filling in the bottom. Lay pasta sheets and spoon some more spinach filling, now spoon over some white sauce and lay pasta sheets..Repeat this till you end up with pasta sheet. Now spoon a final layer of cheese sauce and grate lots of cheese on top. Sprinkle parsley over it and Pop this in oven and bake for 40 to 45 mins.

Remove it from oven and let it stand for 15 mins before slicing and serving.


First make a batch of fresh lasagna using this recipe
or use storebought no cook lasagna sheets

Cook the pasta in salted boiling water  for 3 to 4 min, 
drain them and place it in a plate..
Take your ingredients for filling

heat butter in a pan

add in garlic

add in onions

saute for a min

add in mushrooms

toss well

cook till it shrinks

add in spinach

mix well

cook till it wilts

season with salt 

add in red chilli flakes

sprinkle little italian seasoning..You can use oregano too

toss well

add little water

mix well..Sauce done

now lets make white sauce

grate some cheese.

heat some butter in a sauce pan

add in flour

saute for 2 to 3 mins till it is well roasted

slowly add in milk

keep whisking while you add..so no lumps are formed

keep cooking

it will get thick

now add in salt

you can add pepper..i used some red chilli flakes

now add in cheese

mix well

it will all get gloppy because of cheese

set aside
Now spoon some spinach filling in the bottom of the pan

lay couple of cooked lasagna sheets

spoon some more filling

spread some cheese sauce

lay the cooked pasta sheets

spoon some filling

spread cheese sauce

lay with cooked pasta sheets

sprinkle the mushroom and spinach filling
spread some cheese sauce

now lay cooked pasta sheet

spread cheese sauce

cover the top with cheese
Bake them..Let it rest for 15 mins before slicing
enjoy hot

  5. Hi aarthi I was eagrly waiting for this recipe was abt to ask u for that in the mean while u post it..thanks a lot. Wanna ask u one thing that I dnt have same bowl which you use for baking. Can I use glass bowl for that.
