Eggless Caramel Custard Pudding Recipe - Eggless Creme Caramel Recipe


I have been eyeing on this recipe for a long time. And some of my viewers have been asking for eggless caramel custard recipe. So finally i decided to give it a try and it was a total success. My little daughter loved it so much and finished this entire portion all by herself.

This recipe is such a fool proof recipe, it gives you the perfect texture which you get from a proper creme caramel without the use of eggs. The key ingredient in this is agar agar. This is the brand which i used Meron Agar-Agar China Grass Sachet 30 Grams (10Gms * 3 Pack)








I was looking for a proper agar agar / china grass for a long time now. Some of the brand gives a awful taste and smell once it is set which i hate. Luckily i came across this brand Meron on amazon and thought of giving it a go. When i contacted them for the details, I am glad that they were kind enough to send me some samples so i can try them and share it in my blog.



Agar agar powder is way more easy to use than the strips or flakes, since it dissolves easily in liquid. In india finding agar agar powder is really difficult. But i am glad that i found out this brand. It is perfect and works like a charm too. No funky smells is found in this and it makes the pudding set properly and silkily. I strongly recommend their product.

Preparation Time : 10 mins
Cooking Time : 15 mins
Baking Time: 30 mins

Ingredients:


For Caramel:

Sugar - 1/2 cup
Water - 1/4 cup

For Custard :

Milk - 2 1/2 cups
Sugar - 2/3 cup
Cornflour - 2 tblspn
Agar Agar Powder - 1 tsp
Vanilla Essence - 1 tsp

Method:

Preheat oven to 200 degree C.

Take your moulds and put it in a baking pan with high sides. Set aside.

Take sugar and water in a sauce pan for caramel. And heat it, swirl the pan so the sugar melts. Now heat it on high and cook till the sugar darkens and turn into a  caramel. Dont stir the pan, swirl the pan.

Now pour this into the waiting moulds and set aside. the caramel will harden.

Now in a pan, take cornflour, sugar, milk and agar agar powder and cook it on medium heat, keep whisking till the mix thickens.

Now take it off the heat and add in vanilla and mix well.

Spoon this over the caramel.

Now pour some hot water into the tray and cover the pan with foil.

Bake this for 30 mins.

Remove it and set aside to cool for 30 mins.

Put this in fridge for 4 hours or overnight.

Now run a knife around the sides and unmould it carefully in a plate.

Serve.

Take all your ingredients


This makes 6 ramekins, but i decided to make one in a square mould
Take sugar in a sauce pan


add water


mix well


simmer till sugar melts


now increase the heat and cook till it turns into a caramel

pour this into the ramekins


now set this aside. The caramel will harden once it cools
take sugar in a pan


add cornflour


add milk


add agar agar powder


add it in


whisk till it is all combined


now heat it on low heat


the mix will thicken


take it off the heat and add in vanilla


mix well


spoon this over the caramel


place this in a baking pan with high sides


pour some hot water over it


cover the pan with foil


bake till done


remove and let it cool for 30 mins


put it in fridge overnight


now run a knife around the sides


unmould
