    Ghee biscuits also known as nei biscuits or ghee cookies. This Melt in mouth ghee biscuits made two ways one whole wheat version and another with regular flour. Easy to make and takes just 4 ingredients to make. Ghee biscuits should be accompanied with a cup of masala chai.

    This bakery style ghee biscuits are super easy to make. All you need is a handful of ingredients and you are good to go.

    About Ghee Biscuits | Nei Biscuits

    Ghee biscuits are very popular in south part of india. It is made using flour, sugar, flavouring agent and ghee. Typically ghee biscuits are known as indian biscuits. You can add saffron in this for more indian touch. These are similar to nan khatai but nan khatai has gram flour | besan added.

    You can use wheat flour or plain white flour in making this cookies. Same way demerara sugar can use used instead of white sugar. I would recommend to powder the demerara sugar before using. But brown sugar may affect the texture of the cookies.

    Plain Flour - for making ghee biscuits you can use plain flour (refined flour or maida) or for healthier alternative you can use wheat flour. Both ways it will still turn out great. Check my second recipe for whole wheat nei biscuits.

    Ghee - pure desi ghee gives the nutty aroma for the biscuits. you can use homemade ghee for best authentic taste.

    Sugar - make sure you powder sugar in a blender till fine beofre adding into the dough which makes the mixing process easy.

    Flavourings - cardamom, vanilla are common and popular flavourings in cookie dough.

    I still couldn't believe that a cookie with just a minimum ingredient taste so yummy. These cookies just melts in your mouth.     Whole Wheat Ghee Biscuits (3 Easy Steps)

    Pre-prep

    Preheat the oven to 180 Degree C / 360 Degree F. Melt ghee in a sauce pan. Powder sugar and set aside.

    Ghee biscuits dough

    Take melted in a bowl. Add in powdered sugar, salt and vanilla. Mix this well so everything is combined. Now add in the flour and mix well to form into a soft dough. 

    Shaping biscuits

    Take a spoonful of portion and shape into ball. Arrange this in a foil lined tray. They can be place pretty close because it won't spread a lot.

    Bake & serve

    Now bake this for 15 to 17 mins till the cookies is done. Remove them from oven and allow to cool down. Once they are cooled store them in air tight container. Enjoy with a cup of chai or milk.

    How to Make Ghee Biscuits (Stepwise Pictures)

    1)Take sugar in a blender jar

    2)Powder it fine. Add it in a mixing bowl

    3)Add all purpose flour into the same bowl.

    4)Add in melted ghee

    5)Add cardamom extract

    6)Knead to a soft dough

    mix to a soft dough

    7)Take a small portion. Shape it into ball and flatten it slightly

    8)Arrange in a parchment lined baking tray

    9)Pop it into oven and bake for 15 mins at 180 degree C.

    10)Once baked remove from oven and let it cool for 5 mins.

    13)Once cooled store in an air tight container.

    Whole Wheat Nei Biscuits (Ghee Biscuits using Wheat flour)

    1)Take melted ghee in a bowl.

    2)Add in powdered sugar.

    4)Add a pinch of salt.

    5)Mix this well till combined.

    Tips & Tricks

    • If the dough looks too dry, add a tsp of milk. Don't add too much.
    • This cookies may look soft when you take out of the oven. But as they cools down they get harder.
    • Cool them completely before storing them in air tight container.
    • Instead of adding ghee you can add melted butter.
    • If you like cardamom flavour, skip vanilla and add cardamom powder.
    • You can add chopped nuts into the mixture too.

    Ingredients

    Ghee Biscuits

    • 1 cup All Purpose Flour | Maida 120 grams
    • ½ cup Sugar 100 grams (powdered)
    • ½ cup Ghee 125 ml (Melted )
    • ½ tsp Cardamom

    Whole Wheat Ghee Biscuits

    • 1 cup Wheat flour 120 grams
    • ½ cup Ghee 125 ml melted
    • ¼ cup Sugar 50 grams Powdered ( use as per your taste )
    • ⅛ tsp Salt
    • 1 tsp Vanilla Extract

      I am a great fan of your blog "yummy tummy" and have tried some of your receipes which turned out well.

      In this receipe, you have mentioned ""Now bake this for 15 to 17 mins till the cookies is done"

      Since I am new to baking, please clarify if I have to preheat the oven to a certain temperature and then set the timer. I am having Samsung microwave oven.

      Please elaborate . Thanks for your time.

      I am the latest follower of your site. I prepared most of the Diwali delicacies following your recipes and all turned great !!!! Thanks for the lovely recipes.

      The ghee cookies are called Narayan Katar in Mangalore. I would love to prepare this but I want to use a normal microwave. Is this possible?

      @AnonymousIf you have convection oven you can bake in them. Normal oven is not suitable for baking

      I was craving some crunchy cookies, so I made them today. The dough was fun to roll - so soft to touch and completely non-sticky. But my cookies did spread in the oven - they were big and flat at the end. Maybe the dough needed more flour? I wish they were round and plump, like yours. Still delicious, though.

      Hi aarthi, I tried this cookies today... Two problems... 1. It got flat and spread out 2. It did not have that cracks... Ur cookies were plump and with beautiful cracks... Wat cud be the mistake.. Pls...... SUMI

      The consistency was not too wet... Should it be like chappati dough.. I made it as small balls but it became flat... Maybe next time I will adding a little more flour... Thank u aarthi... I will get back to u... SUMI

      Hi Aarti,i tried these cookies twice over the weekend.But for some reason both the times, i feel it dint bake properly.I dint get the cracks after 17 mins.So i just removed it.Tastewise its good but it dint turn out crispy.is the texture of these cookies crispy?

      Hi Aarthi tried the cookies making double the qty i.e. 240gms maida,100gms powdered sugar,250ml melted ghee,elaichi powder,salt.. but the dough was wet..culd not form balls out of it...so added 1/4+1/4 cup maida and 2tbsp powdered sugar...then made the cookies...turned out good!

      Adapted the recipe adding in a tsp of orange extract instead of vanilla essence, as well as some freshly grated orange zest and a tsp of fresh orange juice. Made a lovely cookie!
