This is one quick fried rice you can make with eggs. It is a healthy but taste so delicious. You can serve it as it is or as a side for any gravy. I used brown basmati rice for this so it is really healthy and rich in fiber. You can use normal rice as well. It is a great dish to put in your kids lunch box as well..

Ingredients:
Oil – 1 tblspn
Eggs – 2
Spring Onion a handful finely chopped
Ginger – 1 tsp minced
Garlic – 1 tblspn minced
Soy Sauce – 1 tsp or to taste
Pepper Powder – 1 tblspn or to taste
Salt to taste
Sugar – 1 tsp
Cooked Brown Basmati Rice – 1.5 cup
Method:
Heat 1 tblspn of oil in a kadai or wok. Pour the egg in and scramble it lightly. Once it is scrambled, remove it to a plate.
Now in the same pan, Add in ginger and garlic and saute for a min.
Add in spring onions, Saute for couple of mins add in sugar and mix well.
Now add in soy sauce. Mix well.
Add in cooked rice and toss well. Season with salt and pepper..Stir fry this for couple of mins..
Add in cooked eggs. Toss once.
Serve hot.
For Cooking Brown Basmati Rice: I add 2.5 cups of water to 1 cup of washed rice. Bring it to a boil. Turn the heat down to a simmer put a lid on and cook for 15 mins or so till the rice has absorbed all the water. Turn off the heat, Now fluff up the rice and cover with lid again and let it sit for 10 mins. Rice done.

once it is just scrambled.. |
remove to a plate |
in the same pan, add in ginger and garlic |
fry for a min |
add in spring onions |
add in sugar |
add soy sauce |
mix well |
add in cooked rice |
mix well |
season with salt and pepper |
add in eggs |
mix well |
