Keralan Potato Roast

First of all…Is there anyone here who don’t love potatoes…I can see no hands…I know that most of us love it and many are mad about it..(See below)
I love potatoes but I don’t like to eat it everyday…But I know a person who is crazy about potatoes..She is none other than my friend Shabi….
Whatever you do with potato whether it is fried or sautéd or roasted or baked…Why not even boiled..she will straightly dig into that…The one form she stays away is RAW..But I am not too sure about this..
She even fights for potato.Yes fight for it..Saying this I like to share a little story about her..
We used to have our lunch as a huge gang in office..If anyone brings potato..Atonce she takes all the stuff and fills her plate and if anyone brings their hand near her plate she will start shouting like hell…Many of my friends are really scared of potatoes now because of this…
But I will sneak some potatoes from her plate when she is not watching….Don’t tell to her…LOL..
Ok Now coming back to this special potato fry…This dish comes straight from kerala and it is made with coconut oil and finished with lots of curry leaves…
This recipe is dedicated to my crazy friend…I know that she love to try this one..Because it is super delicious…
Ok with out no more delay….Off to the recipe…
Ingrediants:
Potato-3 chopped
Onion-1 sliced
Curry leaves-1 spring
Mustard seeds / Kaduku-1 tsp
Turmeric powder /Manjal podi-1 tsp
Chilli powder-2 tsp
Coconut oil-2 tblspn
Salt to taste
Method:
Heat 1 tblspn of oil in a kadai and crackle some mustard in this..
Add in the onions and fry for 2 mins..Add in the potatoes and mix well
Season with some salt and mix well..Add in chilli powder and turmeric powder and mix well
Add a splash of water and cover and cook till the potatoes are tender..
Increase the heat add 1 tblspn of oil and cook for 5-10 mins till the potato gets crispy and golden brown..
Throw a handful of curry leaves and mix well.
Serve with rice..

Ingrediants you need
Slice onions and chop up the potatoes
Crackle some mustard seeds in your clay pot(if you have)
add in onions….
now goes the potatoes
Sprinkle some chilli powder and turmeric powder
Season with salt…
Mix well…
add a splash of water …
Cover and cook till the potatoes are cooked
Increase the heat and let the potatoes crisp up…
throw a handful of curry leaves
Mix well
Without any delay…serve…
Does it looks appetizing…
What do you think about this meal…Morkulambu, Puli Inchi, Rasam, Vandaikai Kichadi and Potato fry…We really had a nice meal.

    I m a die hard reader of yummy tummy…hav tried a lot of recipes…most of it turned out to be successful…today I m in herr for a small collection….request to rename kerala recipes as…just kerala dish or kerala style.instead of keralan…it sounds to be bit…twisty in reading….

    I love your recipes and regularly visit your site. I agree with Divya Nair. Please stop using this word 'Keralan'. It is incorrect and sounds funny. It would be better to call this dish Kerala Style Potato Roast. Thanks, Lakshmi Menon
