Sweet Mango Pickle Recipe
This pickle is my mum's favourite one, She will eat everything all alone. YES it is a pickle that you can eat all by itself. This dish has a slight sweet and sour taste and a little bit of kick from the chilli powder which is perfect So try this and you can store in the refrigerator upto 2 weeks (it wont last more than a week, it was that tasty.
I already have a post about this pickle, this is a updated version. And i wanted to do an updated post on this pickle for a long time because i love this so much. I can just eat it right from the kadai.
About Sweet Mango Pickle
Sweet mango pickle is a popular and addictive condiment made with raw mangoes, spices, oil and jaggery. The pickle itself is jam like and taste so good with curd rice, roti or on its own. Unlike other pickle, this takes literally few minutes to make and you can enjoy immediately.
The process starts with steam cooking raw mangoes until tender and mixing with whole spices, spice powders and jaggery. It literally takes less than 30 minutes to make and you can keep this in fridge for upto a week.
This pickle is so easy to put together. It is so instant to make and best served with roti or even plain rice. But guess what i love to eat it as it is.

Ingredients
Raw Mangoes - choose raw mangoes that are firm and slightly sweet. if your raw mangoes are tart, you might need to add more jaggery.
Spices - for tempering, spices like mustard, cumin, fenugreek, asafoetida is used.
Sambar powder - this has already a mix of spice powders added, so you can skip adding other spice powders. If you are out of sambar powder, you can use turmeric, chilli, coriander powder.
Salt & Jaggery - these two are totally to your taste. Jaggery can be replaced with sugar. But jaggery is healthy option.
Gingelly Oil - Although I prefer to use gingelly oil to cook the pickle, you can use regular oil as well.

Sweet Mango Pickle (Step by Step Pictures)
1)take your raw mangoes, wash them well and peel the skins off.

2)Cut it into small pieces.

3)Take this in a bowl. Now you have to steam cook them. You can use microwave, steamer or any which way you prefer to steam them.

4)I steamed them in my rice cooker. You have to just steam it for 5 minutes until it is fork tender.

5)now take all your ingredients.

6)Heat gingelly oil in a kadai. Add in whole spices and let them sizzle. Once spices are tempered. Reduce the flame and add in sambar powder and cook them in oil for few seconds for it to bloom. Now add in the steamed mango.

7)Add salt, jaggery into the mango and mix well. Cook this for 2 to 4 minutes until it thickens.

8)Sweet mango pickle is ready in an instant.

Instant Sweet Mango Pickle
Equipment
- Cooking pot
- Steamer
Ingredients
- 2 large Raw mango peeled & chopped
- 3 tablespoon Sambar Powder
- ½ cup Jaggery or Sugar
For Tempering
- ¼ cup Gingelly Oil
- 1 teaspoon Mustard seeds
- ½ teaspoon Cumin seeds
- ½ teaspoon Fenugreek seeds
- ¼ teaspoon Asafoetida
Instructions
- Peel and chop raw mangoes. Take them in a steamer and steam cook for 5 minutes. It has to be fork tender and not mushy. Set this aside.
- In a kadai add oil and temper all the whole spices. Once the spices is sizzled. Reduce the flame and add in sambar powder. Mix the sambar powder in the oil.
- Mix in the mangoes,Season with some salt.Now add in the jaggery and mix well. Let it simmer for 4 to 5 minutes,till oil separates from it.
- Allow this to cool down and transfer this to a clean jar.
