    This egg sandwich recipe is a quick and hearty option that can be enjoyed for breakfast, brunch, or even dinner. It’s made using simple ingredients like boiled eggs, caramelized onions, bell peppers, mayonnaise, and cheese, all layered between slices of bread and grilled to golden perfection. kid-friendly and makes a great lunchbox treat or an easy go-to when you’re short on time.

    Sandwiches, that stuff makes my life easier. Because hubby and myself love it so much, we make some kind of sandwiches and finish our breakfast or dinner. My love for sandwiches can be seen through my collection of sandwiches in this blog.

    This sandwich is one of my latest addiction. It has all goodness in it, caramelized onions and peppers, eggs, cheese which is beautifully grilled in butter. Totally addictive. This is a new version of that. I love caramelized onion so much, it is some how sweet and savoury at the same time and pairs beautifully with cheese.

    About Egg Sandwich

    I made this egg sandwich on a day when I had just a few basics in the fridge: eggs, bread, onion, and some mayo. What started as a throw-together meal became a favorite at home. The beauty of this sandwich lies in how simple ingredients come together and turn into something truly delicious. The sweetness from caramelized onions, the mild crunch of bell peppers, and the richness of cheese everything just balances so well. 

    This version is a step up from the usual boiled egg sandwich. Cooking the onions and bell peppers in butter gives the sandwich a comforting, slightly sweet taste. Add to that some seasoned boiled eggs and melty cheese, and you’ve got a great combo. It’s especially filling, which makes it perfect for busy mornings or even lazy weekend brunches. 

    I often make this sandwich for my husband and myself when we want something warm and filling without too much fuss. We both love sandwiches, and this one checks all the boxes easy, quick, flavorful, and satisfying. It also pairs well with simple sides like fresh fruits or even a hot cup of tea.

    Why this recipe works 

    Soft boiled eggs bring a creamy bite that pairs so well with the toasted bread. Everything in the sandwich complements each other without being too complicated. It’s that perfect mix of savory, creamy, a little sweet, and just enough crunch that makes each bite so satisfying.

    Why I like this recipe - I like this recipe because it’s one of those no-fail, comfort meals that I can make in under 30 minutes. On days when I’m not in the mood to spend a lot of time in the kitchen, this sandwich comes to the rescue. I also like that it’s customizable. You can add tomatoes, different cheeses, or herbs depending on what you have.

    Ingredients

    Bread Slices (8 slices): You can use white bread or whole wheat bread for this recipe.

    Eggs (3):  These are boiled, peeled, and sliced.

    Mayonnaise (as needed): Mayonnaise acts like a magic spread; it keeps the sandwich soft inside and adds a creamy texture. If you're not a mayo person, you could also try hung curd or a little cream cheese. 

    Onion (1 large, sliced thin): Caramelized onions are the secret star here. When cooked low and slow in a little butter, they turn golden, sweet, and melt-in-your-mouth soft.

    Bell Pepper / Capsicum (½ a large one, sliced): These are cooked just until soft but still with a slight crunch.

    Butter (1 tsp + more for grilling): Used twice first to sauté the veggies and then again to grill the sandwich to golden perfection.

    Cheese Slices (4 slices):  You can use cheddar or even mozzarella. It helps hold the sandwich together and adds indulgence. 

    Hacks

    1. Boil Eggs in Advance 

    If you know your mornings are going to be hectic, boil the eggs the night before and keep them in the fridge. It makes things super quick the next day you just slice, season, and go. Plus, chilled eggs are easier to peel! 

    2. Prep the Onions and Peppers Early 

    You can caramelize the onions and bell peppers ahead of time and store them in an airtight container in the fridge for up to two days. This trick not only saves time but also deepens the flavor as everything sits together. I sometimes use the same batch for wraps or rice bowls too!

    Egg Sandwich (Step by Step Pictures)

     
    Take all your ingredients
    Take eggs in a pot
    cover with water
    Now boil them
    Put them on stove
    Bring it to boil and cook for 8 to 10 mins
    Once done, remove them and allow to cool a bit
    Peel em
    Slice them
    Season them with salt and pepper
    You need some onions and peppers
    Peel em and cut them
    Slice them thinly
    Melt some butter
    Add in sliced onions
    Saute them till translucent
    Season with salt and pepper
    Cook till they are light golden and soft
    Add in peppers
    Saute them for couple of mins
    Remove them to a plate
    Take a slice of bread
    Spread some mayo

    Spread on both the slices
    Divide your onion filling
    Scoop over the bread
    Place some eggs
    Cover with a slice of cheese
    Cover with the other half
    Press them
    All 4 done
    Melt some more butter
    Place the sandwich
    pat them top with some more butter
    Cook till golden on both sides
    Remove a sandwich to a board
    Cut them in half and enjoy

    Expert Tips 

    1. Use Room Temperature Butter 

    Always use butter that’s at room temperature when you're assembling or grilling the sandwich. Cold butter can be hard to spread and might tear the bread. When it's softened, it glides on smoothly and melts evenly in the pan, giving you that perfect golden crust. 

    2. Grill on Low to Medium Heat 

    Take your time when grilling low to medium heat is key. If the heat is too high, the bread may brown too quickly while the inside stays cold or the cheese doesn't melt fully. A gentle grill ensures everything is warm, melty, and perfectly toasted without any burnt edges. 

    3. Storage Tips 

    If you have any leftover sandwiches, don’t worry—they store quite well! Just pop them into an airtight container and keep them in the fridge for up to a day. Reheat them on a tawa or skillet to bring back that lovely crispness on the outside while warming the insides evenly. 

    4. Serving Suggestions 

    I personally love pairing this warm sandwich with something fresh and light. A crisp apple or a juicy orange adds a refreshing touch and helps balance out the richness. If you’re feeling cozy, a hot cup of masala chai goes beautifully with it. 

    FAQ

    1)Can I make this ahead of time? 

    You definitely can prepare parts of the sandwich ahead. I usually boil the eggs and sauté the onions and bell peppers the night before. Just store them in the fridge in separate containers. But for the best flavor and texture, it’s always nicer to assemble and grill the sandwich fresh when you’re ready to eat. 

    2)Can I make it without cheese? 

    Absolutely! The sandwich is still tasty even without cheese. If you want to keep it a bit indulgent, you could use a sprinkle of grated paneer or a plant-based cheese substitute. Or just let the creamy mayo and flavorful veggies shine on their own. 

    3)What can I use instead of mayonnaise? 

    No mayo? No problem. You can spread a little cream cheese, hung curd, or even plain salted butter on the bread slices. Each gives a slightly different taste, but all keep the sandwich moist and delicious. 

    4)Can I use raw onions instead of cooking them? 

    You can if you like a stronger, sharper bite. But I personally love how caramelized onions add a soft, slightly sweet flavor that blends beautifully with the eggs and cheese. It makes the sandwich feel more balanced and comforting. 

    Variations

    Add a Fresh Crunch  - Layer in a few slices of tomato or cucumber before grilling the sandwich. It adds a refreshing bite.

    Try an Indian Twist  - Swap out the mayonnaise for a little mint chutney. It gives the sandwich a whole new flavor.

    Add Some Heat - If you enjoy spicy food, just drizzle a dash of hot sauce inside the sandwich before grilling,

    Equipment

    Ingredients

    • 8 slices White Bread
    • 4 large Egg
    • 4 tsp Mayonnaise
    • 4 tsp Butter

    For Filling

    • 1 tsp Butter or as needed
    • 2 large Onion peeled & sliced thinly
    • ½ large Bell Pepper sliced thinly
    • 4 slices Cheese Slices
    • 1 tsp Salt or to taste
    • 1 tsp Black Pepper Powder

    Instructions

    • Prepping the Eggs : To start with, boil 3 eggs by placing them in a pot of water. Let it come to a boil and cook the eggs for about 8 to 10 minutes. Once done, drain the hot water, cool the eggs under tap water, peel them, and slice them up. Sprinkle a little salt and pepper over the slices and set them aside while you get the veggies ready.
    • Cooking the Veggies : Next, thinly slice one large onion and half of a bell pepper. In a pan, melt about 1 tsp of butter and add the onions. Sauté them on low to medium heat for around 5 minutes until they turn soft and light golden. Add the bell pepper slices, season with a little salt and pepper, and cook for 2 more minutes. Once done, remove them from heat and keep aside.
    • Assembling the Sandwich : Now it’s time to build your sandwich. Take two slices of bread and spread a thin layer of mayonnaise on both. On one slice, spoon over the onion and bell pepper mix. Then place a few slices of the seasoned boiled egg on top and add a slice of cheese. Cover it with the second bread slice to finish assembling.
    • Grilling and Serving : In a pan or skillet, heat a little more butter and gently place your sandwich on it. Grill it over low to medium heat until both sides are golden brown and slightly crisp. Press it down gently with a spatula so it grills evenly. Once done, take it off the pan, slice it in half, and serve warm. It makes a perfect, no-fuss meal any time of the day.

      @Crystal in TexasI used a cheese slice which i get in my place. There is nothing mentioned in the packet. It is named as Amul Cheese Slice. You could use any of your favorite cheese slice

      Hi Aarthi. .. can I pack this for my son's tiffin. .will it stay for 5-6 hrs without smelling coz I will pack it at 7 am n his break is at 12 : 30 pm. .
