South Indian Sambar Recipe - Sambar Recipe

Sambar plays a important role in south indian menu..We make different types and different version of them suiting of the main dish which we have with it..And this sambar is made with a whole lot of veggies as well. I have quite a few of them here in my blog.

Preparation Time : 10 mins
Cooking Time : 40 to 45 mins
Serves : 5 to 6


Oil - 1 tblspn
Shallots - 10 peeled and chopped roughly
Tomato - 1 large cubed
Green Chilli - 1 slit
Brinjal - 1 chopped
Carrot - 1 chopped
Beans - 6 chopped
Drumsticks - 1 cubed
Cucumber - 1 cup peeled and chopped
Ladysfinger - 4 chopped
Potato - 1 chopped
Snake Gourd - 1/2 chopped
Toor Dal / Tuvaram paruppu - 1 cup
Chilli Powder - 1 tblspn or to taste
Coriander Powder - 2 to 3 tblspn
Turmeric powder - 1 tsp
Salt to taste
Jaggery / Sugar - 1 tblspn 
Tamarind Pulp - 1 to 2 tblspn
Coriander Leaves a small handful finely chopped
Water as needed

For Tempering:
Ghee- 2 tblspn
Mustard Seeds / Kaduku - 1 tsp
Cumin Seeds / Jeerakam - 1 tsp
Dry Red Chilli - 2
Asafoetida / Hing / Kaya Podi - 1/2 tsp
Curry Leaves  a sprig


Take washed toor dal in a cooker, cover with water and cook for 3 whistle. Let it simmer for 5 mins. Now turn off the heat and let the steam escape all by itself. Open it mash well and set aside.

Heat oil and add in onion, chilli and tomato. Saute it for 2 mins.

Add in all vegetables and saute it for 5 mins. Add turmeric and salt and mix well.

Add in water, Cover it cook for 10 to 15 mins till the veggies is cooked.

Now add in cooked dal, spice powders, tamarind and jaggery and mix well. Simmer this whole thing for 10 mins.

Now make tempering by heating ghee and crackling all whole spices. Fry this for a min. Pour this over the sambar and mix well.

Add in coriander leaves and mix. Leave the pan covered till serving.

  2. Arati, sambar is a good staple food and so I was eager about the recipe for preparing it for regular use. However, I am alone and prepare food for myself only. If I buy even 250gms each of all those vegetables, they will make several litres of sambar and I shall have to eat the same thing day and night for several days. If I use only a little of each of the vegetables compatible with one cup of toor dal, the remaining vegetables will get spoilt sooner or later. Can you suggest a regular south indian sambar with a few select vegetables for good taste, which I can store in the refrigerator for 3-4 days and finish? I can prepare moderate quantities of idli, dosa, rice regularly to go with the sambar.
