வெண்டைக்காய் சாம்பார் / Lady Finger Sambar / Okra & Lentil Curry

I have been suffering from a severe toothache for the past couple of days. Man it is horrible, went to hospital yesterday, still no relief. Because of this my life has been very slow. No work is happening. I am planning to take a visit to the hospital today too..I am posting a recipe which was in my draft.


As a southindian sambar is one of our staple dish, we make it with a whole lot of vegetables, frankly we make sambar with any vegetables. I have quite a few recipe for sambar in my blog, you can check it here. 

We have sambar with dosa, idlis, rice. It taste so heavenly.I hope you will give it a try and let me know how it turned out..



Preparation Time : 10 + 30 mins(for cooking dal)
Cooking Time : 45 mins
Serves – 5 to 6


Ingredients:

Ghee – 1 tblspn
Shallots / Sambar Onion – 10
Tomato – 2 medium size chopped
Lady Finger  – 15 cut into pieces
Green Chilli – 1 Slit
Curry leaves – 1 spring
Turmeric Powder / Manjal Podi – 1 tsp
Coriander Powder / Malli podi – 1 tblspn
Chilli Powder – 1 tsp
Cumin Powder / Jeera Podi – 1 tsp
Tamarind Pulp – 2 tblspn ( Click here for recipe)
Tuvar Dal / Toor Dal / Tuvaram Paruppu – 1 cup dry
Salt to taste
Sugar to taste


For Seasoning:
Ghee – 1 tblspn
Mustard Seeds / Kaduku – 1 tsp
Cumin seeds / Jeerakam – 1 tsp
Urad dal / Ulundu – 1 tsp
Hing / Asafoetida / Kaya podi – 1/4 tsp
Dry Red Chilli – 2


Method:

Start by cooking the dal. Wash the dal in lots of cold water and transfer them to a pot. Add water to it and cook on a medium heat for 30 mins till they are completely soft.

Take a kadai. Add a tblspn of ghee. Add in shallots, green chilli and saute for a min.

Add in lady finger and saute for 5 to 7 mins till they are nicely coloured.

Add in the spice powders and mix well.

Add in salt and sugar and give it a stir.

Pour some water along with curry leaves,tamarind pulp and tomatoes. Bring this to a boil and cover with a lid. Simmer this for 15 to 20 mins till the veggies are cooked.

Now add in the cooked dal and simmer for 15 more mins till the flavours are combined.

Now throw in lots of coriander leaves and mix well.

Make the seasoning by heating ghee and crackling all the spices given in the seasoning list for a min.

Pour this seasoning over the sambar and mix well.

Cover with the lid till serving.

Serve with rice or idli.

You will need dal, ghee, vegetables, salt, sugar,
seasoning spices and spice powders..
These are the spices you need..
Start by cooking the dal
Now heat some ghee in a pot
add in shallots and green chillies
add in okra
toss well with the oil
add in the spice powders
season with some salt and sugar
and give a good mix
pour some water
add some curry leaves
add in tomatoes
add some tamarind pulp
Cover and cook
add in dal
and simmer for a while
throw in lots of cilantro
make seasoning
add the spices in 
pour it over the curry
and mix well
