Amma is famous for her coconut barfi, whenever my cousins visit our place, the first thing which they request my mom is to make some coconut barfi. My mum makes it as a edible gift for them to take along their journey. Since it is so easy peasy to make, this barfi has taken its strong reputation in our house.
It just calls for simple everyday ingredients. You will need just coconut, some sugar and little of some extra stuff. The another cool thing about this recipe is, it needs no ghee in it. But i love to add a tsp of ghee for flavour. But actually you dont need anything, the natural oil in the coconut gives enough oilyness to the barfi.

Preparation Time: 5 mins
Cooking Time : 20 to 25 mins
Makes : 10 pieces
Coconut - 1 cup grated
Sugar - ¾ cup
Milk - ¼ cup
Ghee - 1 tsp
Cardamom powder - 1 tsp
Take coconut and milk in a blender and make into a slightly coarse puree.
Add this to a non stick or a heavy bottom pan. Add in sugar to this and keep stiring.
Keep cooking and mixing this till it starts to thicken and leaves the sides of the pan, it will take around 15 mins.
Add in ghee and cardamom powder and mix well.
Keep this mixing. It will start to leave the sides of the pan and foam around the edges.
At this point. Pour this into a greased plate and allow it to cool down.
Once cooled, cut into squares.
This barfi can be stored in room temparature upto 3 days. You can store this more than a week in the fridge.
RECIPE IN ENGLISH:
|Take all your ingredients|
|Take coconut in a blender|
|Add milk to it|
|Puree it coarsely|
|Add this to a heavy bottom pan|
|Add in sugar too|
|Keep stiring till it thickens|
|Add a tsp of ghee|
|Keep mixing till it leaves the sides|
|Grease a plate|
|Pour the barfi mixture in this|
|cut into squares|
