Cauliflower pakora is one of the most popular snack across India usually served with hot tea or coffee. Learn how to make crispy cauliflower pakoda with step by step pictures and video.

    We make this very often at home. It is one of my go-to recipe for gobi pakoras. Mom loves fried cauliflower or gobi 65 more than manchurian. So whenever we buy cauliflower we used to make this often. Check out other cauliflower recipes.

    I can remember my childhood days when I start making dishes like this. Because when we were little, Amma used to make this deep fried snacks before we come from school or college.

    She makes it the right time so that when we reach home, we will be welcomed with a heady aroma of this bajji. Amma make this bajji with potato, chillies, raw banana, brinjals or onions. My favorite in that is onion bajji. You can also make with cooked cauliflower which taste so delicious.

    About Cauliflower Pakoda (Gobi Pakora)

    Cauliflower pakoda is also known as gobi pakora or cauliflower pakora. You can make pakora two ways. I have shared both the recipes in this recipe post. Make sure to check my gobi 65 and fried cauliflower recipe.

    1. Mix cooked cauliflower with spices, gram flour, rice flour and cornstarch and deep fry.
    2. You can also make a batter with gram flour and spices and dip cooked cauliflower in this and fry.

    Cauliflower is cooked with salt and turmeric till tender. You can prefer to make fried cauliflower any way you prefer.

    These crisp golden nuggets make a great snack for kids, since these turn out very crisp, kids will love it for sure. This bhajji are best had with some hot Indian chai. This taste equally delicious with some masala chai.

    Cauliflower Pakoda Ingredients

    Cauliflower Pakoda or Gobi Pakora

    Cauliflower - use fresh cauliflower for this recipe. Wash and cut gobi into small bite size florets. Cook cauliflower with salt and turmeric till tender and use them in making pakora.

    Spices - You can use any of your favorite spice mix. I use a combination of chilli powder, turmeric powder. You can add chaat masala powder, cumin powder.

    Flour to Use - I add a mix of gram flour, rice flour and cornstarch which turns so crispy when fried.

    Ginger & Garlic - fresh ginger and garlic paste adds flavour to the dish.

    Oil - use flavourless oil like refined oil for deep frying.

    How to Make Cauliflower Pakoda (Stepwise Pictures)

    Cooking Cauliflower

    1)Chop cauliflower into small pieces. Bring water to a full boil. Add some salt and turmeric powder (if using). Now add in the cauliflower pieces. Cook for 2 to 3 minutes until slightly cooked. Strain the cooked cauliflower in a sieve and set aside to cool.

    Once cooled, take the cauliflower in a bowl.

    Marinating Cauliflower

    2)Add in ginger garlic paste to the cooked cauliflower.

    3)Add in turmeric powder into the cauliflower.

    4)Add in chilli powder. You can use kashmiri chilli powder for colour.

    5)Add salt to taste.

    6)Add in some lemon juice to taste. Mix this really well. You can use it immediately or leave to marinate for 15 minutes.

    Adding in Flour

    7)Now for the binding ingredients. Add in gram flour.

    8)Add in rice flour. This along with cornstarch helps with crispy texture.

    9)Add in cornstarch.

    10)Add a pinch of baking soda.

    11)Toss the flour mix into the cooked cauliflower.

    12)Add a splash of water to mix the pakora mixture.

    13)Mix the cauliflower really well. So it is coated with the spices and flour.

    Frying Cauliflower Pakora

    14)Heat oil for deep frying, drop cauliflower into the hot oil and fry till golden brown.

    15)Now the cauliflower is fried and looking golden.

    16)Strain the cauliflower on some paper towel.

    Variations

    Gobi Bajji or Cauliflower Pakora - This version is made with a batter of gram flour and spices and cooked cauliflower is dipped in this and fried till crispy.

    Ingredients Used for Gobi Pakora

    • 1 medium Cauliflower cut into florets, boiled and strained
    • 1 cup Gram Flour | Besan
    • 1 tbsp Ginger Garlic Paste
    • ½ tsp Baking soda
    • 1 tbsp Kashmiri Chilli Powder
    • 1 tsp Turmeric powder
    • ½ tsp Asafoetida
    • 2 tsp Salt
    • Oil for deep frying

    How to Make Gobi Pakora

    1)Bring water to boil and add in salt and turmeric to it. Now add in cauliflower florets in this and cook for 2 minute.

    2)Strain the cooked gobi in a sieve and set aside.

    3)For making batter. Take a mixing bowl. Add gram flour and salt.

    7)Add in kashmiri chilli powder, turmeric.

    8)Add some water and mix to make a smooth batter.

    9)The batter has to be slightly thick and not too thin or thick.

    10) Now heat oil for deep frying. Dip the cauliflower in this batter and fry it in oil.

    11)Cook till it gets golden and crispy.

    12)Strain and serve with mint chutney or ketchup.

    Expert Tips

    • Don't over cook the cauliflower when blanching. Just cook for 2 to 3 minutes because it will cook when frying as well.
    • You can add more or less spices depending on your taste.
    • Deep fry the cauliflower on medium high heat so it gets crispy.
    • You can serve gobi fry hot with green chutney or ketchup.

    Storage & Serving

    Cauliflower pakora taste best when served hot with tea or coffee. As it cools it tends to get soft and soggy.

    Gobi Pakora Recipe

    • 1 medium Cauliflower cut into florets, boiled and strained
    • 1 cup Gram Flour | Besan
    • 1 tbsp Ginger Garlic Paste
    • ½ tsp Baking soda
    • 1 tbsp Kashmiri Chilli Powder
    • 1 tsp Turmeric powder
    • ½ tsp Asafoetida
    • 2 tsp Salt
    • Oil for deep frying

    Instructions

    Cauliflower Pakoda Recipe

    • Take all ingredients except oil in a bowl and mix well. Add very little water and mix well.
    • Heat oil in a pan, drop the pakora in hot oil and fry till golden brown. Strain and set aside. Serve with ketchup.

    Cauliflower Bajji Recipe

    • Bring water to boil and add in salt and turmeric to it. Now add in cauliflower florets in this and cook for 2 minute. Strain this in a colander and set aside.
    • Now make a batter by mixing gram flour, salt, chilli powder, turmeric powder, baking powder, asafoetida, ginger garlic paste and some water. Make this batter little bit thicker and not too thin or thick.
    • Now heat oil for deep frying. Dip the cauliflower in this batter and fry it in oil. Cook till it gets golden. Strain and serve with mint chutney or ketchup.
