    Gluten Free Chickpea Crackers Recipe

    Imagine a tasty crackers made with chickpeas, no butter, no wheat or eggs. Yes that is what you get with this recipe. This crispy crackers is gluten free and eggless made with clean ingredients link cooked chickpeas, cheese, oats, spices and olive oil. Chickpea crackers is packed with flavour and taste great with your favorite hummus. 

    Chickpea crackers 

    Few months back I would have never imagined that you can make crispy crackers using chickpeas. Until recently when I came across a recipe for healthy crackers on Instagram. The recipe used boiled mashed sweet potatoes and cheese to make cheese crackers. That's when the ideas came to me.

    How about making a healthy high protein chickpea crackers with basic ingredients. I added 3 tablespoon of oats in my mixture to add some fibre and make my crackers extra crispy. 

    About Chickpea Crackers

    Chickpeas crackers are made with boiled chickpeas, oats, cheese, olive oil, spices and herbs. You need a handful of ingredients to make this healthy high protein crispy crackers. It is similar to our kara thattai.

    All you need is blend all the ingredients together and shape it into a dough. Check my pizza crackers and seed crackers.

    You can roll the whole dough between sheets of parchment paper and bake all in one go. No need to cut out small cookies from it. But I like to pre cut it using a pizza cutter and bake. This way once the crackers is baked you can break them apart and serve.

    I used mozzarella cheese in this recipe and it worked perfectly. But for more cheese flavour, you can use cheddar and parmesan cheese. Cheese makes the crackers get crispy. The one thing you have to keep in mind is to roll the crackers thin and also bake until it gets crispy. We enjoyed this crackers with hummus.

    This recipe is actually very easy to make. At first I thought it would be difficult to roll the dough. But actually the dough turned out to be super easy to roll, specially between parchment paper.

    You can oil your hands and parchment paper slightly when handling the dough. But actually the dough was non-sticky and easy to handle. 

    I tasted the dough and actually liked the taste. You can add any seasonings or herbs that you like. But personally I preferred this combo of spices. If you are making a bigger batch, you need to bake this in two batches. If you don't have an oven, you can bake this in an air fryer.

    Some recipes for chickpeas crackers use raw soaked chana or chickpea flour. Since this uses boiled, cooked chickpeas, it is high in protein and also easy to digest. Enjoy chickpeas crackers with tzatziki, pico de gallo, tahini sauce or hummus. To make it even high protein enjoy with this chicken dip.

    Ingredients

    • Chickpeas - use cooked chickpeas in this recipe. Black chana can be used as well. You can cook chickpeas yourselves or use canned chickpeas.
    • Cheese - I used mozzarella cheese in this recipe and it worked perfectly. But for more cheese flavour, you can use cheddar and parmesan cheese. Cheese makes the crackers get crispy.
    • Oats - I used instant oats. You can use rolled oats or even oat flour.
    • Spices and Seasonings - I used paprika, mixed Italian herbs, garlic powder and salt in the dough. You can add whichever seasoning and herbs you like.
    • Oil - I used olive oil, butter, ghee can be used too. 

    Step by Step Pictures

    1)Preheat oven to 180 degree C (360 degree F). Take a large baking tray and keep it ready. Take cooked chickpeas, cheese, oats in a blender.

    2)Add in red chilli powder, garlic powder, mixed herbs.

    3)Add in oil. I am using olive oil. You can use any oil or even melted butter.

    4) Once everything is added into the blender jar and puree till smooth. The mixture will be super thick, so you might need to scrape the sides of the blender often for even grinding. 

    5)The ground mixture will be like a soft dough. Take the dough and place onto a sheet of parchment paper. Now shape the dough into a rough rectangle.

    6)Now place another sheet of parchment paper on top. 

    7)Now roll this gently until the cracker dough is evenly spread and slightly thin.

    8)Peel off the top parchment. If your oven is smaller, you might need to make this in 2 batches by dividing the dough into in half. 

    9)Use a pizza cutter to cut vertical and horizontally to form crackers.

    10)Use a tooth pick to make Tiny holes all over the crackers.

    11)Place the parchment paper with the crackers on the baking tray or sheet and place it into the oven. Bake this for 25 to 30 minutes until the crackers is golden brown and looking crispy.

    12)Remove from oven and let it cool down completely for 10 minutes. Now break it into shards and enjoy with your favourite dip.

    13)Once cooled, you can store this in a ziplock cover in fridge. Enjoy with dip of choice. We had it with hummus.

    Expert Tips

    • You have to use cooked chickpeas in this recipe and not raw.
    • If your mixture looks too crumbly when grinding, you may add a spoonful of water when grinding. 
    • Make sure you taste the dough and adjust with seasoning and spices of your choice.
    • Roll the dough thin for super crispy cracker. Bake until the crackers get crispy, you can adjust baking time accordingly. 
    • Once rolled, you can sprinkle top with some sesame seeds as well. 
    • You can bake this in an air fryer also. 

    Serving and Storage

    Once cooled, you can store this in a ziplock cover in fridge. The crackers tends to go slightly less crispy after a day or two. Place it back into the oven for another 5 minutes to crisp it again. You can even bake this in an air fryer. 

    Enjoy chickpeas crackers with tzatziki, pico de gallo, tahini sauce or hummus. To make it even high protein enjoy with this chicken dip.

    FAQ

    Q: Can I use black chickpeas in this recipe?

    Yes you can use black cooked chickpeas or chana in this same recipe.

    Q: Can I use any beans in this recipe?

    Yes kidney beans, pinto beans can be used instead of chickpeas.

    Q: What all seasonings can I use?

    Any dried herbs, basil, oregano, cumin powder can be used in the dough. You can use pre mix seasoning like peri peri also.
