Microwave Eggless Pineapple Upside Down Cake Recipe

My love for microwave cake making is taking all over me, i am almost making new cakes everyday. Love baking cakes in microwave so much, because it is so easy to make and also you can satisfy your craving anytime.Check out my famous pineapple upside down cake..

So give this a try and let me know how it turns out for you..

Preparation Time : 5 mins
Cooking Time : 3 mins
Serves : 1

Ingredients:
Pineapples – chopped to fill bottom of the bowl
Jaggery or Brown Sugar – 2 tblspn
All Purpose Flour / Maida – 3 tblspn
Sugar – 1 tblspn
Curd / Yogurt – 1 tblspn
Butter – 1.5 tblspn melted
Pineapple Juice – 1 tblspn
Vanilla Essence – 1/2 tsp
Baking Soda – a pinch

Method:
Grease a microwave safe bowl with some butter. I used a 250 ml capacity ramekin.
Take chopped pineapples and jaggery in a bowl and mix well. Lay this on the bottom of the bowl and microwave it for 1 min. Remove it and set aside.
Now make the batter, take curd, sugar and vanilla in a bowl and mix well.
Add in butter, pineapple juice and mix well. Add in flour and baking soda and mix well.
Pour this over the pineapples and pop it in microwave and cook it for 2 mins.
Remove it and cool for 5 mins.
Invert it and serve with a scoop of icecream.

Pictorial:
Take all your ingredients

add in some grated jaggery
mix well
grease a microwave safe small bowl with butter
lay the pineapples 
pop this in microwave
cook for 1 min
remove it and set aside
now take curd in a bowl
add in sugar
add some vanilla
beat till creamy
pour in some pineapple juice
add in some melted butter
mix well
add in flour
and some baking  soda
mix well
pour the batter over pineapples
pop it in microwave
cook for 2 mins
let it cool a bit
invert and serve

    Hi Aarthi.. The cake looks yummy.. can't wait to try it.. I have a few questions.. can I use tinned pineapples? And if I want to increase the quantity to make a bigger cake would I need to increase the microwave time for the cake? Thank you..

    @Gauri Khannayes u can use canned pineapples, yes u have to increae the cooking time as well

    @AnonymousU can use egg instead of curd. Add 1/2 a beaten egg.

    Hi aarti..can I make the pineapple juice at home that needs to be added to the cake or we need the market sugary one juice?..if I make the juice at home without putting sugar just adding little water is it ok?

    Dear Aarthi, thanks a ton for this recipe. As the name of your blog suggests this cake is very "yummy �� in the tummy"!!! I can't believe that something made in theicrowave could be so soft and spongy.I followed your recipe verbatim and the result is foodgasm!!!Only one little difference, I used kiwi instead of Pineapple �� but it is indeed tasty

    yummy yummy! good cake texture! i used frozen pineapples and some orange juice since that was all i had, and it turned out really good, very sweet.
