Okay i have to admit, my actual plan is to make jujubes. I researched a lot about them and many recipes called for liquid glucose, but few recipes didn't use that. Even though i had liquid glucose on hand, i wanted to make without that. So i decided to give it a try. I made everything and put it in the fridge. When it is set, i cut them into squares and when i tried to roll it in sugar i found that they started melting and they didn't have the texture of jujubes. It tasted like the jelly which you get in shops. It was delicious though. So i changed the name and sharing here, you know sometimes things happen like this.. But i am glad that it didn't turn into a disaster.

I made this jello with water, but you can use fresh fruit juice too. I recommend you to use unsweetened fruit juice, if you have only sweetened then reduce the sugar level accordingly. Also you can use china grass in place of gelatin.

So give this a try and your kids will love it for sure..I will soon share a layered jello soon..

    Preparation Time : 10 mins
    Setting Time : 2 to 3 hours
    Serves : 3 to 4

    Ingredients:

    Gelatin - 3 tblspn
Water - 2 cups (check notes)
    Sugar - 1 cup
    Lemon Juice - 4 tblspn
Any Essence - few drops ( I used lemon essence )
Food Colouring - as you wish (I used yellow and green)
Oil - ½ tsp for greasing plates

    Method:

Take gelatin in a bowl, add in 1 cup of cold water and let it soak for 5 mins.

Take sugar, 1 cup water in a sauce pan and heat it up. Stir till the sugar is melted.

Once the sugar is melted, add in soaked gelatin to the hot sugar water and mix till the gelatin is melted completely.

Add in lemon juice and mix well.

Now divide this into two bowls and add your favorite essence and food colouring. Mix well.

Grease a high sided plate with a little oil and pour this syrup in the plates and set it in the fridge for 2 to 3 hours or till the jelly is set.

Now remove it from fridge and cut it into squares.

    Serve chilled.

    Notes:

1)You can use any essence or food colouring as you wish.
2)Instead of water, you can use unsweetened fruit juice too, that will make this more healthy. If you have only sweetened fruit juice, then reduce the sugar level.
3)Instead of gelatin, you can use equal amount of china grass.
4)This has to be stored in fridge as all jellies and puddings.
