My little blog reached 2 million hits, this means my blog has been viewed 2 million times over this past 1.5 years. YUMMY TUMMY has given me lots of recognition and proud moments over the years..I hope you will support me more and make me proud more often..

To celebrate this awesome moment I have a awesome cake just for you. This cake is made entirely me, I mean its my own recipe, I didn't refer any recipes online or any cookbook or any bits of paper. And the result is an awesome credit from hubby, before telling that let me give you a small intro about my favorite cake when I was a chubby little girl..Wondercake, it is a popular branded cake which has so many flavours like chocolate, vanilla, pineapple and you name it. It taste so soft and yummy, we used to have it along with a cup of milk or tea...Any one remember that cake?
OK NOW BACK TO THE CREDIT..This is what hubby told me after tasting it. "This cake taste like WONDERCAKE".How cool is that..

The cool thing about this cake is , it has no butter it..Actually there is no much fat in it. It just has 3 tblspn of olive oil. That's it..So you can enjoy it without feeling guilty. I love baking more than eating those cake, but this is one cake which I totally love it..It has the real orange flavour, I loved the little orange zest peek here and there all over the cake, which makes it more spectacular..

Ingredients:
All Purpose Flour / Maida - 1 1/2 cup
Sugar - 1 cup
Eggs - 2
Olive Oil - 3 tblspn
Yoghurt / Curd - 1/2 cup
Orange Zest from 2 oranges
Orange Juice from 1 orange
Baking powder - 1 tsp
Baking Soda - 1/2 tsp
Salt - 1/4 tsp
Vanilla Essence - 1 tsp
Method:
Preheat the oven to 170 Degree C / 340 Degree F.
Take flour, baking powder, baking soda and salt in a bowl and mix well. Set this aside till use.
Zest couple of oranges and juice one whole orange and set aside.
Line the bottom of the loaf pan with parchment paper and oil all the sides of the pan. Set this aside till use.
Take eggs, sugar, vanilla in a large bowl and mix well.
Add in oil and mix till it is combined.
Add in curd and mix well.
Now add in the orange zest and orange juice and mix well.
Now add in the flour mixture and combine it gently.
Pour this entire thing into the loaf pan and bake it for 45-50 mins.
Remove from the pan and check whether it is cooked by inserting a toothpick.
Let it cool completely before removing from the tin.

Congratulations on the 2mm hits, Aarthi. I've been experimenting with baking up my own concoctions as well...and had some success recently with a flour-less no-butter no-oil banana-chocolate-orange cake with nuts.
Although I personally don't have any gluten allergies, I've been impressed by the advancements in the gluten-free arena...especially baking...and would love to see you use gf flours instead of maida. I know if a novice like me could bake a yummy gluten-free cake, someone with your potential could do wonders in educating this audience.

Hi I baked this yesterday. Followed the exact measurements, but the cake turned to be a little dense. It tasted more like orange bread than cake.
@A and Ayou can use flax seed powder in place of eggs..I think you can add a little more oil and a additional 1/2 cup of curd. I have never tried it, give it a try and let me know how it came out
