Maida Poori Recipe - Puri Recipe - How to Make Puffy Pooris

I have already shared a poori recipe in my blog, this is another version of it in which i added some maida to it. I added some wheat flour to it as well, so it can be rolled easily. Also this pooris are so soft and taste yummy.

Preparation Time : 10 mins
Resting Time : 15 mins
Cooking Time : 30 to 45 sec per poori
Serves: 4


Maida / All Purpose Flour - 1 cup
Wheat Flour - 1 cup
Salt - to taste
Oil - 1 tblspn
Water as needed
Oil for deep frying


Take both flour, salt and oil in a bowl, mix well so the oil is well mixed in with the flour.

Add water slowly and knead it to a stiff smooth dough.

Set this aside for 15 mins.

Now divide this into equal balls.

Take one ball in a lightly oiled surface, roll it thinly into small round pooris.

Heat oil for deep frying, when it is hot, drop pooris in and press the top with a ladle, it will puff up.

Flip over and cook for few more sec.

Now drain it and serve with bhaji.

Take wheat flour in a bowl

add maida

add salt
add oil
mix well with a fork

add water slowly

knead to a stiff dough..set aside for 15 mins

divide it into small balls

take one ball in a oiled board

roll it thinly

all done

drop one poori in hot oil

press the top gently

it will puff up

flip over and cook



  1. For more quantity - do we need to double up the measurement or what's the ratio between the flour?
