I have shared a pita bread recipe which was made in oven. I wanted to share a version which is made in a pan. Puffy soft Arabic pita bread which is so easy to make. This stove top version is easier than oven version. It taste way better than oven ones. Make this Arabic bread and enjoy it with with grilled chicken, garlic sauce or hummus.

About Kuboos Recipe
Kuboos is a popular Arabic flat bread also known as pita, pita bread or Arabic bread. It is a simple flat bread made with a yeasted dough cooked in a hot wood fired oven.
It is made with plain flour, yeast, salt & sugar. The dough is rolled into flat bread like shape and cooked in an oven. It can be easily made at home in our standard domestic oven or stove top.
Traditionally kuboos or pita bread is cooked in oven which can be quite difficult to get the puffed pita pockets which is iconic in a pita or kuboos. But the version which I have shared here is made in a super hot tawa or cook top which is very easy and fail proof. If you want you can make kuboos with whole wheat flour to make it healthy.
Kuboos is usually served with curries, hummus, baba ganoush, shawarma, pickles or grilled chicken. This flat bread can be used in wraps or rolls.

Kuboos Ingredients (Stove top pita bread)
All Purpose Flour - plain flour is used to make traditional kuboos. You can use whole wheat flour for a healthy option.
Dry Yeast - you can use instant dry yeast for making this bread. If you are using instant yeast, you can directly add it into the flour when kneading.
Sugar - a little bit of sugar helps the yeast to activate. Honey can be replaced for sugar.
Salt - Always sprinkle salt once the flour is added over the yeast water. Yeast and salt should never come in contact directly. Because salt has the tendency to kill the yeast.
Warm Water - The water temperature should be 38C/100F. The temperature shouldn't be too high or it will kill the yeast.
Olive Oil - a drizzle of good quality olive oil adds the fruity taste to the kuboos.
Ways to Cook Kuboos | Pita Bread
Baking pita in oven
Heat the oven to 250 degree C | 475 degrees F and place cast iron skillet on the middle rack to heat. Place the rolled-out pitas directly on the hot cast iron pan. Bake for 2 minutes on one side, and then using a pair of tongs, carefully turn pita over to bake for 1 minute. The pita will puff nicely. Remove and store warm.
Cooking Pita Stove Top (in tawa)
Once the dough is rolled, place it on a hot tawa (preferably cast iron). Cook for few seconds till you see bubbles forming on top of the kuboos. Now carefully flip over and cook the other side as well. Use a spatula to gently press the top of the kuboos. The kuboos will puff up like a balloon. Once the kuboos is puffed, flip over and cook for few seconds on other side too. Remove the kuboos from the pan and store warm.
How to Make Kuboos (4 Easy Steps)
Activating yeast - Take sugar and dry yeast in a bowl. Add in warm water over the yeast sugar mixture. Mix it well and set aside for 5 minutes for the yeast to bubble up. It has to look foamy.
Make Dough & Proof - Once the yeast is activated, add in the flour, salt and mix. At this point add in olive oil. Knead the dough really well for at least 5 minute. Place the dough covered with a tea towel in a warm spot for 1 to 2 hours for the dough to double in size.
Rolling - Once the dough is doubled, punch out the air and divide the dough into 10 to 12 equal portions. Take a small portion of dough and roll it into slightly thick circle.
Cooking Kuboos - Once the dough is rolled, place it on a hot tawa. Cook for few seconds on one side. Now carefully flip over and cook the other side as well. The kuboos will puff up like a balloon. Flip over and cook for few seconds on other side too. Now remove the kuboos from the pan and store warm.
How to Make Kuboos (Stepwise pictures)
Activating yeast
1)Take sugar and dry yeast in a bowl. Add in warm water over the yeast sugar mixture. Yeast needs some kind of sweetener to activate. Instead of sugar you can add honey as well.
Top Tip: The water temperature should be 38C/100F. The temperature shouldn't be too high or it will kill the yeast.
2)Once the water is added. mix it well and set aside for 5 minutes for the yeast to bubble up. It has to look foamy.
Top Tip: If your water doesn't look foamy, it is better to start again because if the yeast is not activated then the dough will not rise.
Making Dough
3)once the yeast is activated, add in the flour. I used plain flour but you can use whole wheat flour as well.
4)Add salt over the flour. Yeast and salt should never come in contact directly. Because salt has the tendency to kill the yeast.
5)I used a fork to mix the flour in the water. Combine flour and water together so there is no dry patches of flour visible.
6)At this point add in olive oil.
Proofing Dough
7)Knead the dough really well for at least 5 minute till it is smooth and soft.
8)Place the dough covered with a tea towel in a warm spot for 1 to 2 hours for the dough to double in size.
9)Once the dough is doubled, punch out the air and divide the dough into 10 to 12 equal portions.
Rolling the Dough
10)Take a small portion of dough and roll it into slightly thick circle. You can sprinkle some flour on the work surface before rolling.
Cooking Kuboos
11)Once the dough is rolled, place it on a hot tawa. Cook for few seconds till you see bubbles forming on top of the kuboos like shown in the picture below.
12)Now carefully flip over and cook the other side as well. Use a spatula to gently press the top of the kuboos. The kuboos will puff up like a balloon.
13)Once the kuboos is puffed like this, flip over and cook for few seconds on other side too.
14)Now remove the kuboos from the pan and store warm.
15)Enjoy kuboos in a sandwich or serve with any of your favorite dipping sauce.
