    This is one of the recipe one of my viewer requested. Luckily I had some cream cheese on hand which I wanted to make use of. Finally I made it few days back and it was a super hit. you can use hung curd as cream cheese or check this link, I added my homemade strawberry compote and the filling was to die for.

    What is No Bake cheesecake?

    Cheesecake is a layered sweet treat with soft, fresh cheese (usually cream cheese, or ricotta), sugar, cream make up the creamy layer. Cheesecake can be made two way, bake and no bake. Even though baked is popular, I prefer a no bake cheesecake which stays super creamy. No bake just requires mixing and assembling and  can be made in number of different flavours.

    Cheesecake is one of the most popular and loved dessert around the world. It is made with a biscuit base, topped with a creamy filling and topping of choice. The dessert is light, creamy and delicious. 

    Blueberry cheesecake has a thick blueberry topping made from sugar, water, cornstarch is drizzled over the Cheesecake. Blueberry puree is added to the filling to enhance the flavour of the Cheesecake.

    You can use any biscuits that you prefer for the base. Chocolate, digestive biscuits or graham crackers can be used. Crushed biscuits is mixed with melted butter. For nutty flavour, you can bake the biscuits till golden. Instead of making fresh blueberry topping, you can use blueberry preserve or jam.

    Blueberries - fresh blueberries taste great in this recipe. If you don't have fresh blueberries you can use frozen berries. Instead of making blueberry topping, you can use blueberry preserve or jam. 

    Cream Cheese - This classic cheesecake requires cream cheese. The most important and prominent component in cheesecakes is cream cheese. Cream cheese is the foundation of your basic cheesecake recipe. If you use cold cream cheese, your mixture will be lumpy. So make sure your cream cheese is at room temperature.

    Cream - you can use fresh cream which is whipped or you can use dairy free whipped topping. 

    Sugar - confectioners sugar or icing sugar is whipped with cream cheese till creamy. If you don't have icing sugar, you can powder regular granulated sugar. 

    Biscuits - like all cheesecakes, the base is made with crushed biscuits. You can use any biscuits that you prefer for the base. Chocolate, digestive biscuits or graham crackers can be used. Crushed biscuits is mixed with melted butter. For nutty flavour, you can bake the biscuits till golden.

    Butter - melted butter is mixed with crushed biscuits to make the base of the cheesecake. Use salted or unsalted butter as your preference. 

    Cornstarch - I like to add some cornstarch mixed with water to create a thick blueberry compote.

    Tips for Perfect Creamy Cheesecake

    Choosing biscuits - You can use any biscuits that you prefer for the base. Chocolate, digestive biscuits or graham crackers can be used. Crushed biscuits is mixed with melted butter. 

    Baking biscuit base - For nutty flavour, you can bake the biscuit base till golden. Baking biscuit base creates a toasty nutty flavour in the cheesecake. 

    cream cheese room temp - Cream cheese is the foundation of your basic cheesecake recipe. If you use cold cream cheese, your mixture will be lumpy. So make sure your cream cheese is at room temperature.

    Adjust sweetness - you can add more or less sugar as per your taste. 

    Balance taste - a drizzle of lemon juice, orange juice creates a slight tangy taste in the cheesecake which compliments creamy cheesecake.

    How to Make Blueberry Cheesecake (Stepwise Pictures)

    Pre-preparation

    1)For making this no bake blueberry cheesecake, I am using spring form pan. This makes un moulding cheesecake easier. if you don't have this pan, you can line any round cake pan with foil or plastic wrap.

    Making Blueberry Topping

    2)Mix 1 tablespoon cornstarch with 3 tablespoon of cold water to a smooth mixture. Set this aside, we will be using it for making blueberry topping.

    3)Take fresh blueberries in a sauce pan.

    4)Add in sugar to taste. You can use maple syrup or agave instead of honey.

    5)Cook this together till it starts to boil and cook down.

    6)Add in little cornstarch slurry into the blueberry mixture. This will thicken the topping a lot.

    7)Now the blueberry topping is ready. Cool this slightly and store in a container in fridge until ready to use.

    Making Biscuits base

    8)Take any of your preferred biscuit in a blender and make it into a coarse powder. Take the crushed biscuit in a bowl.

    9)Add in melted and slightly cooled butter into the biscuit.

    10)Mix this well using a spoon. The mixture should look like moist sand.

    11)Spoon the biscuit mixture into the prepared pan and spread evenly. press firmly so it makes a thick biscuit base.

    Now you have two options, you can place this in fridge for 30 minutes. or you can pop the pan into the 180 degree C preheated oven and bake for 10 minutes. This make the base slightly toasty and crispy.

    Whipped cream

    12)Take cold whipping cream in a bowl. Instead of fresh cream you can use dairy free cream or whip topping as well.

    13)Whip cream till thick and whipped. Remove this to another bowl and set aside.

    Making Cream Cheese Mixture

    14)In the same bowl, take softened cream cheese in a mixture.

    15)Use an electric beater to whip the cream cheese till creamy and light.

    16)Add in powdered sugar , vanilla and optional lemon juice or lemon zest and whip till creamy.

    17)now the cream cheese mixture is creamy.

    18)Now add in the whipped cream. Fold it gently using a spatula which will lighten the mixture.

    19)Now the cream cheese mixture is ready.

    18)Now add in few spoons of blueberry topping into the cream cheese mixture.

    19)Fold gently. Now the cream cheese for blueberry cheesecake is ready.

    Assembling Cheesecake

    20)Spoon the cream cheese mixture over the chilled biscuit base.

    21)Spread evenly using a spatula. Place the cake pan in fridge for 4 to 6 hours.

    22)Once the cheesecake is set. Spoon some of the blueberry topping on top. Place it back in fridge until set.

    Expert tips

    • Make sure cream cheese is at room temperature for even mixing and creamy texture. 
    • Instead of icing sugar, you can use powdered sugar. 
    • Adding a splash of vanilla and lemon juice for flavour and taste. 
    • Instead of blueberries, you can use strawberries, cherries, or mangoes. 
    • Cheesecake has to be left in fridge for atleast 8 to 10 hours or overnight for proper set.

    Storage and serving

    Blueberry cheesecake can be stored in fridge upto a week. You can enjoy this as it is chilled.

    Ingredients
      

    For Biscuit Base

    • 15 no Biscuits
    • ½ cup Unsalted Butter melted

    For Cheesecake Mixture

    • 400 grams Cream Cheese softened
    • 1 cup Icing Sugar
    • 1 cup Whipping Cream
    • 1 teaspoon Vanilla Extract
    • 2 teaspoon Lemon Juice (optional)
    • 1 teaspoon Lemon Zest (optional)

    For Blueberry Topping

    • 1½ cups Fresh Blueberries or Frozen
    • ¼ cup Sugar or to taste
    • 1 tablespoon Cornstarch | Cornflour
    • 3 tablespoon Water

    Instructions
     

    • Take biscuits in a blender and powder coarse. Take it in a bowl. Add melted butter and mix well. Spoon this into the springform pan and spread evenly. Chill in fridge for 15 mins.
    • Make blueberry sauce. Take blueberries in a sauce pan, add sugar and heat till it comes to a bubble. Mix cornflour with water and add into the blueberry mix. and cook till thickens. Set aside to cool.
    • Whip cream in a bowl till stiff. Remove this to a bowl. Now in the same bowl, take cream cheese in a bowl and whip till creamy. Add in icing sugar, vanilla, lemon juice, lemon zest, if using and whip till creamy. Now add in the whipped cream and fold gently. Spoon little blueberry sauce into the cream cheese and fold gently.
    • Spoon this over the biscuit base and top with blueberry sauce. let them chill in fridge overnight. Now slice and serve.
