Healthy Brown Bread Recipe - 100% Whole Wheat Bread Recipe

Since we have started dieting, we have been trying to eat healthy and low fat dishes. One of my all time life saver is wheat bread. We enjoy it during morning, it is perfect. But in my place, the bread which we get as brown bread or wheat bread has all purpose flour added in them to make it soft. So we are kind of staying away from it.

I have made so many version of bread in my blog, so far this is the best whole wheat bread i have ever made. It is sturdy enough, slices perfectly and has a great texture and flavour to it. I specially love this bread when it is toasted, i used this in my avocado toast recipe.

Preparation Time : 10 mins
Rising Time : 2 to 3 hours
Baking Time : 45 mins
Makes : one 9x5 inch loaf

Whole Wheat Flour / Atta - 4 cups / 480
No Fat Dry Milk Powder or Milk Powder - 1/3 cup / 40 gram
Salt - 2 tsp
Oil - 3 tblspn
Dry Yeast - 2 tsp
Honey - 1/4 cup
Warm Water - 1 1/3 cup / 320 ml
Sugar - 1 tsp


Take yeast and sugar in a bowl, add in 1/3 cup of warm water over it, mix well and let it sit and activate till it is bubbly.

Take flour, milk powder, salt in a bowl and mix well.

Make a well in the center and add in the yeast mix, honey, oil and more water. Knead this to a soft dough. You have to knead this for a good 5 to 7 mins.

Now oil the dough lightly, cover it with plastic wrap and let it rise for an hour or two till it is doubled in size.

Now take the dough and knead it well. Flatten it to the size of the loaf pan.

Start rolling and pinch the edges. Now put this seamed side down in the loaf pan and cover it with plastic wrap. Let it rise for 45 mins or so.

During the last 10 mins or rising, preheat oven to 170 degree C. Oil the 9x5 inch loaf pan lightly with oil.

Now Put this in oven and bake for 45 mins.

Remove it and let it cool for 15 mins in the pan, remove it from pan and cool it completely.

Slice and serve.

Take all your ingredients

Take yeast and a tsp of sugar in a bowl

add in little luke warm water

mix well and set aside till it is gets activated

just like this..look how bubbly it has got

now take wheat flour in a bowl

add in milk powder..i used skimmed milk powder

add in salt

give this a really good mix

make a well in the center

pour in the wet ingredients
drizzle in honey

add in some oil

add little water as needed

mix well

knead this to a soft dough...You have to knead this for a good 5 to 7 mins

now add in oil

coat it well

cover it with a plastic wrap

let it rise..

knead it well

brush the loaf pan with oil so nothing sticks

i took the dough out 

you have to flatten it to the size of the pan

now roll it

roll like this

when you come to the end

pinch the edges

i checked the size of the bread to the pan

place it into the pan

i just brushed the top with some oil

cover and let it rise

now it is risen

bake them

look how beautiful this loaf looks

Cool it completely and slice..

The slices were sturdy and very flavourful as well..

  3. The bread looks ausum! Can yu tell me the measurement to be used if i use instant yeast?
    As last time i used the exact measurement of dry yeast for my instant yeast for the basic white bread recipe of yours. It was hard and very yeasty smelled and didnt come out well.

  9. @AnonymousIt depends on the climate. You can heat your oven for 2 mins, then put the bowl inside it and turn off the oven, this way the dough will rise soon

  13. @dhivya swaminathanit may be because the yeast is not activated. first allow the yeast to bloom then use it

    The dough rose well and everything else was fine,but the bread was very dense and more like a cake.
    Can we add baking powder or baking soda to make it fluffy?

    1. since it is 100% wheat, the bread will be little dense

    This looks very good...I'm totally new to baking...I tried out ur recipe ....the outer crust came out well but inside its not cooked..I kept in the oven for extra 5 mins..but still it dint workout..help me solve this please
