    Stuffed Braided Bread

    I wanted to make a stuffed braided bread so badly after my braided brioche success..When i made my crispy vegetable buns, i had some leftover dough so used that to make this braided bread and it turned out yummy.

    Ingredients for Stuffed Braided Bread

    • Milk - 2 to 3 tbsp for brushing on top
    • Cheese - as needed (optional)

    For Dough:

    • All Purpose Flour / Maida - 2.5 cup
    • Dry Yeast - 1.5 tsp
    • Sugar - 2 tbsp
    • Salt - 1.5 tsp
    • Oil - 3 tbsp
    • Warm Milk - 1 cup
    • Warm Water as needed

    For Filling:

    • Oil - 1 tbsp
    • Ginger - 1 tbsp finely chopped
    • Garlic - 1 tbsp finely chopped
    • Onions - 1 medium size chopped finely
    • Carrot - 1 finely chopped
    • Beans - 5 chopped finely
    • Capsicum / Bell Peppers - ½ chopped finely
    • Peas - ½ cup ( i used frozen)
    • Tomato Ketchup - ¼ cup
    • Soy Sauce - 2 tsp
    • Salt to taste
    • Sugar - ½ tsp
    • Chilli Powder - 1 tsp
    • Spring Onion or Coriander leaves - 3 tbsp finely chopped

    I used the same veg filling which i used in my fried bun recipe. You can stuff this with anything u like, chicken, meat, veggies, potatoes and anything u want. Will share different version soon.

    These braided bread look so good, you can make mini braids and they look even cuter..Since u have to cut this big one into pieces for serving..

    How to Make Stuffed Braided Bread

    1. Start by making the dough. Take yeast and sugar in a bowl, add little warm milk and mix well. Set aside for 5 mins for the yeast to activate.
    2. Now take Flour, salt, 2 tbsp of oil in a large bowl and mix well. Add in the yeast mix in and the rest of the milk. Mix well using a fork.
    3. Add little warm water as needed. Knead this to a soft dough. The dough has to be non sticky.
    4. Drizzle in 1 tbsp of oil and knead well.Cover and set aside to rise for 1 hour.
    5. While the dough is rising, lets make the filling. Heat oil in a kadai. Add in all the chopped veggies and saute them for 2 mins. Add in chopped ginger and garlic and saute them well.
    6. Add in peas and mix well. Cook this till the veggies are cooked.
    7. Add in salt, sugar and chilli powder and mix well. Add in ketchup and soy sauce. Toss well.
    8. Finally add in spring onion or coriander leaves and mix well. Set aside.
    9. When the dough is risen, punch the air out and knead it once more. Add more flour if it is too sticky.
    10. Now take the dough out, divide it two or three portion depending on the size of the bread you need.
    11. Take one ball and roll it into rectangle, cut both the edges as shown in pic. spoon some filling in the center..and start braiding as shown in picture.
    12. For a variation, you can add some grated cheese over the filling and seal it for a cheesy version.
    13. Once you have braided. Place it in a well oiled baking tray which is lined with baking parchment paper.Brush well with milk.
    14. Bake this for 12 mins in 180 degree C. Now increase the heat to 220 Degree C and bake for 5 to 8 mins this till give nice color to the bread.
    15. Remove it and serve warm.

    Ingredients

    • 2 to 3 tbsp Milk for brushing on top
    • Cheese - as needed optional
    • For Dough:
    • 2.5 cup All Purpose Flour / Maida
    • 1.5 tsp Dry Yeast
    • 2 tbsp Sugar
    • 1.5 tsp Salt
    • 3 tbsp Oil
    • 1 cup Warm Milk
    • Warm Water as needed
    • For Filling:

    Stuffed Braided Bread Recipe Step by Step

    Take all your ingredients for the dough

     

    Take yeast in a bowl

     

    add little sugar to it

     

    add little milk to it

     

    mix well and set aside for 5 mins or so

     

     

    take flour in a bowl

     

    add little salt

     

    add in oil

     

    mix well and make a well in the center

     

    now add in the yeast mix in

     

    pour in some milk

     

    mix well

     

    add little water 

     

    knead to a soft dough

     

    add little oil

     

    knead it to a soft dough..The dough has to non sticky,
    so add more flour when kneading

     

    cover the bowl with some plastic wrap and let it rise

     

    While the dough is rising, lets do the filling

     

    Hear oil in a pan, add in all veggies including the onions

     

    give a quick toss in the oil

     

    add in some finely chopped ginger and garlic

     

    saute till veggies are cooked

     

    add in peas..i used frozen

     

    saute them as well

     

    cook till everything is well cooked

     

    add in little salt, sugar and chilli powder

     

    saute them up

     

    add in little ketchup

     

    and soy sauce

     

    mix well

     

    add in chopped spring onion or chopped parsley

     

    toss well

     

    you can see now the dough has well rised

     

    remove the wrap

     

    punch down the air

     

    Take half of the dough into a work surface

     

    roll it into a long rectangle

     

    cut like this

     

    cut the other side too...

     

    spoon the stuffing in the middle

     

    fold like this

     

    then lets start braiding

     

    like this

     

    go on..

     

    and go on

     

    now we are almost there

     

    finished

     

    place that in a well oiled baking tray which is lined with parchment

     

    brush them with milk

     

    baked 

     

    serve warm

     

    slice and serve

      Wow Aarthi! Am surely going to make this. I want to add chicken to the mixture. At what point should I do this? Do I precook the chicken?

      @Anonymousit is because your yeast is not activated. add very warm water along with sugar to yeast. if u add too hot water then the yeast with die and the dough wont rise

      @Ragavicook the chicken first in a lil oil till it is done, then remove them. Then add after the veggies are done.

      Hi Aarthi,

      The buns came out very well... But whenever I bake buns the tastes is good but the bun doesn't soft as store bought... Buns in your pics seems like very soft and moisty... Any tips to get soft buns?
