    Atta Ladoo Recipe

    Atta ladoo is also known as Wheat flour ladoo, godhumai maavu laddu or atta ke laddu. It is a traditional Indian sweet made using whole wheat flour, roasted gram dal, sugar, ghee and cardamom.

    This is an amazing sweet which melts in our mouth. It is popular during festivals like Krishna Jayanthi, Diwali. This ladoo is very healthy for kids and pregnant women. These healthy and tasty homemade ladoos are energy booster, has high amount of protein and easy to digest. This is a perfect snack for snacks box recipes.

    About Atta ladoo

    Atta ladoo is a nutritious Indian sweet recipe made with simple everyday staples in our kitchen. This ladoo is loved for its rich taste and wholesome ingredients. It is prepared without any artificial ingredients. These wheat flour ladoos are packed with the goodness of roasted gram dal, ghee and natural sweetener like sugar or jaggery in some variations.     The inclusion of cashews enhance both the taste and texture of the ladoo. These atta ladoos are a popular choice in many Indian households due to its health benefits and long shelf life.

    Why I love this recipe - Atta ladoos are quick and easy to make. It comes together in under 30 mins with minimal efforts. These Ladoos works well as a dessert, snacks or even a small bite with tea. Atta ladoos gives me a comforting and nostalgic feel. It reminds me of homemade sweet my mom and grand mom makes during evening time and festivals.

    • These Ladoos are made with basic ingredients which are available in our indian households and that are healthy too.
    • When these Ladoos are stored properly it can stay fresh for days without refrigeration.
    • Due to its mild sweet and easy to chew these atta ladoos are ideal for both children and elders.
    • Atta ladoos are very healthy. Which are packed with protein, good fats . It is a great as a energy snack or post meal sweet.

    Ingredients

    Wheat flour: This is the main ingredient to make the ladoo.

    Roasted gram dal: It is full of protein. When powdered it mixes well with the flour and makes the ladoos smooth 

    Sugar: This adds sweetness to the ladoos.

    Cardamom powder: This gives a nice smell and light sweet-spicy taste to the ladoos.

    Ghee: This helps to hold the ladoo shape and adds rich taste. This also makes the ladoos soft.

    Cashew nuts: Fried cashews adds a crunchy bite and nutty flavour to the ladoos.

    My Personal Tips

    • Powder roasted gram dal in advance and store it to save a preparation time.
    • Use slightly warm ghee to help blend and bind the mixture smoothly.
    • Sieve wheat flour to get a finer texture in the ladoos.
    • Always roast the flour in low heat to avoid burning and to enhance the aroma of the ladoo.
    • Use jaggery instead of sugar for the healthy option.
    • Shape the ladoos while the mixture is still warm to make them firm and smooth.

    Atta Ladoo (Step by Step pictures)

     
    Take all your ingredients
    Take sugar in a blender
    powder it finely
    In the same blender add in roasted chana dal
    Powder it finely
    Take 2 tblspn of ghee in a kadai
    Add in cashews
    Fry till golden
    Remove it to a bowl
    In the remaining ghee
    add in wheat flour
    Roast it till nice aroma comes
    now it is toasted well
    add in powdered sugar and porikadalai powder
    mix well
    heat it till the sugar starts to melt
    You see now the sugar has started to melt
    add the remaining ghee till the mix gets moist
    The colour will change to dark brown
    add in cardamom powder
    add in the fried nuts
    mix well
    remove it to a bowl and let it cool a bit
    take small portion in your hands
    shape it into balls
    done.
     

    Expert tips

    • Use heavy bottomed kadai or pan to avoid burning of the flour while roasting.
    • Stir continuously while roasting to ensure even cooking and to prevent lumps.
    • Don’t add all the ghee at once. Reserve some for mixing later.
    • If the mixture becomes too greasy or sticky let it cool for sometime before shaping.
    • Always store the ladoos only after they are fully cooked to prevent moisture buildup in the container.

    Variations

    Besan ladoo: This ladoos are made with roasted gram flour, ghee and sugar. These are rich, nutty taste and in soft texture. It is often flavoured with cardamom and garnished with nuts.

    Sattu ladoo: It is made from roasted chana flour, jaggery and ghee. It is a healthy snacks which is high in protein and gives energy . These Ladoos are mostly famous in North part of the India.

    Ragi ladoo: This is made with ragi flour, ghee and jaggery or sugar. This is rich in calcium and good for kids and elders. These Ladoos has a slightly earthy flavour.

    Boondi Ladoo: It is made from tiny fried balls of gram flour which is soaked in sugar syrup and shaped into ladoos. These Ladoos are juicy, sweet and popular festive treat.

    Rava laddu: This is made with rava, sugar, ghee and coconut. It is soft and slightly grainy with a mild sweetness. It is often served during festivals like Diwali or Krishna Jayanthi.

    Aval Laddu: It is made from flattened rice, jaggery and ghee. It is a snack which is quick to prepare, healthy and often made as a simple sweet at home.

    FAQ

    Q: Can I use jaggery instead of sugar?

    Yes. You can replace sugar with jaggery for a healthier version.

    Q: Why are my ladoos not holding shape?

    The mixture may be too dry or too cool. Add a little warm ghee or shape the ladoos while still warm.

    Q: Can I skip roasted gram dal?

    It adds smoothness and taste. But you can also make only with atta. But the texture may become little bit different.

    Q: How long can I store this ladoo?

    If it stored in an airtight container they stays good for 2-3 weeks at room temperature.

    Q: Can I add dry fruits or seeds?

    Yes. You can add raisins, almonds, pista or flax seeds for extra nutrition and taste.

    Q: Can I roast the ingredients in advance?

    Yes. You can roast and store the flour and dal powder in airtight containers to save time.

    Equipment

    • Cooking pot

    Ingredients

    • 1 cup Whole Wheat Flour
    • ½ cup Roasted Gram Dal Pori Kadalai
    • 1 cup Sugar
    • 1 teaspoon Ground Cardamom
    • ½ cup Ghee
    • 3 tablespoon Cashews chopped finely

    Instructions

    • Powder sugar separately in a blender and set aside. Take roasted gram dal (pottu kadalai) in a blender and powder fine. Set this aside.
    • Heat 2 tablespoon in a kadai. Add in cashews and fry till golden. Remove it to a bowl and set aside.
    • Add in wheat flour and fry for few mins till light golden and aromatic. Then add in powdered sugar and porikadalai powder and mix well. Add in the remaining ghee and mix well.
    • Roast it for few more mins till the sugar is little melted and it starts to get little moist and golden brown. Now add in cardamom powder and fried cashews. Mix well and take it off the heat. Allow the mix to cool down.
    • Take a small portion from this and shape it into tight ladoos. Store this in an air tight container and serve.

      @New mommyYou can add grated jaggery after roasting the flour and mix well. Thn shape it into ladoos. Add more ghee if needed
