Expert tips
- Use heavy bottomed kadai or pan to avoid burning of the flour while roasting.
- Stir continuously while roasting to ensure even cooking and to prevent lumps.
- Don’t add all the ghee at once. Reserve some for mixing later.
- If the mixture becomes too greasy or sticky let it cool for sometime before shaping.
- Always store the ladoos only after they are fully cooked to prevent moisture buildup in the container.
Variations
Besan ladoo: This ladoos are made with roasted gram flour, ghee and sugar. These are rich, nutty taste and in soft texture. It is often flavoured with cardamom and garnished with nuts.
Sattu ladoo: It is made from roasted chana flour, jaggery and ghee. It is a healthy snacks which is high in protein and gives energy . These Ladoos are mostly famous in North part of the India.

Equipment

Ingredients
- 1 cup Whole Wheat Flour
- ½ cup Roasted Gram Dal Pori Kadalai
- 1 cup Sugar
- 1 teaspoon Ground Cardamom
- ½ cup Ghee
- 3 tablespoon Cashews chopped finely
Instructions
- Powder sugar separately in a blender and set aside. Take roasted gram dal (pottu kadalai) in a blender and powder fine. Set this aside.
- Heat 2 tablespoon in a kadai. Add in cashews and fry till golden. Remove it to a bowl and set aside.
- Add in wheat flour and fry for few mins till light golden and aromatic. Then add in powdered sugar and porikadalai powder and mix well. Add in the remaining ghee and mix well.
- Roast it for few more mins till the sugar is little melted and it starts to get little moist and golden brown. Now add in cardamom powder and fried cashews. Mix well and take it off the heat. Allow the mix to cool down.
- Take a small portion from this and shape it into tight ladoos. Store this in an air tight container and serve.
