    Bourbon Biscuits, is one of the most popular and favorite cream biscuits of many. This chocolate cream biscuits is popular all over India and the world. Delicious buttery sugar sprinkled chocolate biscuits sandwiched with chocolate butter cream. A family favourite bourbon biscuits made easily at home without any preservatives & eggs.     Bourbon Biscuits

    I have been making marie biscuits and oreo biscuits at home for quite a long time. Finally I made bourbon biscuits couple days back and it turned out as expected.

    When I shared it on Instagram, everyone was asking for the recipe. So here you go. This recipe is very basic and it calls for a handful of ingredients which you already have on hand. But the way which you put together will give you the perfect bourbon cookies.

    About Bourbon Biscuits

    Bourbon biscuit is a classic biscuits which is known for its iconic sugar topped chocolate biscuits sandwiched with a thick chewy chocolate cream filling. This biscuits is most loved biscuits to enjoy with a cup of milk. If you enjoy this biscuits as much as I do, you definitely have to try my eggless chocolate biscuits, chocolate sugar cookies and chocolate chip cookies.

    The biscuits are crisp, buttery with a deep chocolate flavour. The iconic taste and feel comes from the sugary topping. The cookies has a strong scent of vanilla added, I prefer to use my homemade vanilla extract to give the flavour. The cream inside the bourbon biscuits is a sweet chocolate cream which is dense and fudgy.

    There are two steps in making this biscuits at home. You have to get your shortcrust cookie dough, roll it and cut into rectangles and bake them. Once the biscuits are baked and cooled, you can make the cream which is a simple sugary chocolate cream. Once you sandwich them together you create this iconic class bourbon biscuits. In this blog post I have shown how to make this delicious biscuits with step by step pictures.

    Bourbon Biscuits Ingredients

    Plain Flour - I used plain flour also known as All purpose flour for making this biscuits. You can obviously use wheat flour but it may change the texture a bit. But still it will taste delicious. But in my personal opinion you can opt for half all purpose flour and half wheat flour.

    Cocoa - use the finest quality cocoa powder you can find or afford for. Since this biscuits rely on chocolate flavour both in the cookies and filling. It is important to use good quality cocoa.

    Sweetener - I used a combination of brown sugar and honey which provides the caramel flavour and the crisp texture.

    Butter - good quality unsalted butter is preferred both in cookies and cream. salted butter tends to make baked goods salty so try to avoid it.

    Baking Soda - a small amount of baking soda is used to give the crisp buttery texture.

    Chocolate Butter Cream - the filling for the biscuits is a simple chocolate buttercream. I used my small blender to make the frosting, you can use food processor as well. I used a soft butter, icing sugar, cocoa and vanilla.

    How to Make Bourbon Biscuits (Stepwise Pictures)

    Creaming Butter with Sugar

    1)Take unsalted butter in a mixing bowl. It is recommended you to use unsalted butter so you can control the salt that goes into the dough. Sometimes using salted butter can make the biscuit dough too salty.

    2)Add in brown sugar and honey. These two sweetener gives the cookie the crisp texture.

    3)Cream butter with brown sugar and honey for 1-2 minutes till it is creamy.

    Adding Dry Ingredients

    4)Add in plain flour. You can obviously use wheat flour but it may change the texture a bit. But still it will taste delicious. But in my personal opinion you can opt for half all purpose flour and half wheat flour.

    5)Add in cocoa powder. You can sieve the cocoa powder if you find it lumpy.

    6)Add in baking soda. You don't need baking powder in this recipe.

    7)Add in salt and mix well.

    8)Mix the flour mixture into the creamed butter sugar mix. So the flour is crumbled into the butter mixture like we do for shortcrust cookies.

    Making Chocolate Biscuit Dough

    9)Add a splash of milk into the cookie dough. Don't add too much, you just need few spoon to bring the dough together.

    10)Now the dough is soft and smooth.

    Rolling Cookie Dough

    11)Now we are going to roll the cookie dough into a rectangle to cut it into pieces.

    12)Place the cookie dough in between two sheets of parchment paper. This helps the cookie dough from sticking to the rolling pin when rolling.

    13)Use a rolling pin to roll gently. Don't make it too thick or too thin. You have to roll the cookie dough till it is 2 cm thickness.

    14)Gently peel off the parchment paper on top.

    Cutting Cookies

    15)Use a sharp knife to cut out cookies. Trim the sides off the cookie dough.

    16)Now we are going to make mini rectangles. I shaped the cookie dough into a square and then cut it in the middle.

    17)Now cut into small rectangles like this.

    18)You can easily remove each rectangles using a spatula.

    Baking Bourbon Biscuits

    19)Place the cut out biscuits in a parchment lined baking sheet. I rolled the remaining cookie dough into small cookies.

    20)Now use a fork to prick on top of the cookies to create the pattern. This pricking helps the biscuits from puffing up and also makes it bake evenly.

    21)Now for the iconic sugar topping. Sprinkle sugar over half of the cut out cookies.

    22)Now bake the cookies in a 160 degree C preheated oven for 9 to 12 minutes. The cookies may look soft when you remove from the oven, but as it cools it will harden up.

    Make Cream Filling

    23)Take soft butter, icing sugar, cocoa powder and some vanilla extract in a blender or food processor. You can use a whisk or electric beater to mix the cream.

    24)Now the chocolate buttercream is ready. It has to be thick and pipable. If it is too runny, add more icing sugar and cream again.

    Sandwiching Cream Biscuits

    25)Now flip over half of the non-sugar sprinkled cookies. Make sure the cookies is completely cold.

    26)Spread the butter cream on top of the biscuits. You can put the cream into a piping bag and pipe it.

    27)Sandwich with the other biscuits.

    28)Let the biscuits sit for 2 hours for the icing to harden. Enjoy.

    29)Bourbon biscuits are best when served with a cup of milk.

    Expert Tips

    • Use soft unsalted butter for making biscuit dough. Using salted butter make the cookies salty.
    • Don't add too much milk for making dough. Just add few drops until the dough comes together.
    • Instead of parchment paper, you can use plastic wrap for rolling.
    • Don't over bake the biscuits, bake for the mentioned time else the cookies may burn. 
    • When making cream, if you find it runny in consistency add more icing sugar.
    • Make sure the cookies is cooled completely before piping cream.
    • Allow the sandwiched cookies to set for few hours before serving which makes the buttercream to harden.

    Equipment

    • Mixing Bowl
    • Blender or Food Processor for making cream
    • Parchment Paper

    Ingredients

    FOR BISCUITS

    • ½ cup Unsalted Butter 110 grams
    • ¼ cup Brown Sugar 50 grams
    • 1 tbsp Honey
    • 1 cup All Purpose Flour 120 grams
    • ¼ cup Cocoa Powder 25 grams
    • ½ tsp Baking Soda
    • ¼ tsp Salt
    • 2 tsp Milk to make dough
    • 2 tbsp Sugar for topping

    FOR FILLING:

    • 4 tbsp Butter
    • ½ cup Confectioners Sugar (Icing Sugar)
    • 1 tbsp Cocoa Powder
    • 1 tsp Vanilla Extract

    Instructions

    • Preheat oven to 160 degree C or 320 degree F.
    • Take butter, sugar and honey in a bowl and whisk till creamy. Add in flour, cocoa, baking soda, salt and mix well. Add few drops of milk and knead to a dough.
    • Place the dough between sheets of parchment paper. Roll it between parchment paper till it is 2 cm thick. Cut into strips like bourbon biscuits.
    • Arrange in a tray lined with parchment paper. prick with fork, sprinkle sugar all over the cookies on half of the cookies.
    • Bake it in the oven for 9 to 12 mins. Remove it and cool it down.
    • Now make the filling, take all ingredients in a blender and blend till creamy.
    • Take cookies, spread filling on one side, top with other cookie. Put in fridge for few mins. Serve.
