    Stir-Fried Pumpkin Recipe or Pumpkin Thoran with step by step pictures. This is made with Onion, Pumpkin and Desiccated Coconut.

    Stir-Fried Pumpkin

    Stir fries make a great sidedish for rice or roti. I make different combination of them very often. This one is a quick sidedish you can make in under 30 mins. It uses a combination of pumpkin and onion and finally the whole thing is tossed with dessicated coconut.

    Ingredients for Stir-Fried Pumpkin

    • Onion - 1 large chopped finely
    • Pumpkin - 4 cups peeled and chopped finely
    • Oil - 2 tbsp
    • Salt to taste
    • Turmeric powder - 1 tsp
    • Chilli powder - 2 tsp
    • Dessiccated Coconut - 1 cup

    How to make Stir-Fried Pumpkin

    1. Heat oil in a kadai, add in onions and pumpkin and toss well. Season with salt and turmeric powder.
    2. Now mix this well and cook on a low heat covered for 5 to 8 mins till pumpkin is cooked.
    3. Add in chilli powder and mix well.
    4. Add in desiccated coconut and toss well. Cook this on high heat for 5 mins so the coconut coats the pumpkin well.
    5. Serve.

    chop onions and pumpkin finely
    heat oil in a pan, add it in
    toss well
    season with salt
    add turmeric powder
    mix well..cook covered on a low heat till it is done
    add chilli powder
    mix well
    add dried coconut / dessicated coconut
    toss well and cook on high heat for 5 mins
