Mixed Vegetable Chutney / Veg Chutney / Mixed Veg Chutney


After my carrot chutney recipe, i got confidence to try out most wanted recipe which is made with vegetables. I always dreamt of this recipe for a very long time. I wanted to include somekind of vegetables in the chutney so it will make it more tasty and healthy. So i made it and it didn't even taste that it had vegetables in it. It was so yummy. So try this and let me know how it turned out.

Preparation Time: 10 mins
Cooking Time : 25 to 30 mins
Serves: 5 to 6

Ingredients:

Oil - 1 tsp
Onion - 1 small chopped
Green Chilli - 4 to 5
Ginger - 1 inch piece chopped
Garlic - 5 cloves
Turmeric Powder / Manjal Podi - 1 tsp
Tomato - 1 large chopped
Carrot - 1 medium size chopped
Beans - 10 chopped
Cauliflower - 1 cup chopped
Fresh Coriander Leaves - 1/2 cup 
Tamarind Pulp - 2 tblspn
Salt to taste
Sugar - 1 tsp

For Tempering:
Oil - 2 tblspn
Mustard Seeds / Kaduku - 1 tsp
Urad Dal / Ulundu Paruppu - 1 tsp
Cumin Seeds / Jeerakam - 1 tsp
Asafoetida / Hing / Kaya Podi - 1/4 tsp
Dry Red Chilli - 1

Method:

Take carrot, cauliflower, beans in a microwave safe bowl, add around 1/2 cup of water and cook it covered for 5 mins. 

Heat oil in a kadai. Add in onions, ginger, garlic, green chilli in it and saute for a min.

Add in turmeric powder and saute for 30 sec.

Add in tomatoes and saute for couple of mins.

Now add in the cooked vegetables along with the water and mix well.Add in sugar and mix well.

Increase the heat and cook for a good 10 mins or so. This will evaporate the water and makes the vegetables get more flavour and loses its raw taste.

Allow this to cool a bit, take the vegetables in a mixer and add coriander leaves, tamarind, salt. Now puree this. You can make it little chunky or do it very smooth.

Transfer the chutney to a bowl.

Now make tempering by heating oil and crackling mustard, urad dal, cumin, dry chilli and asafoetida. Once it is crackled pour it over the chutney and mix well.

Serve with dosa.

Take all your ingredients


Take beans, carrot, cauliflower in a microwave safe bowl


Cook them for 5 mins or so


Cook till done


Heat oil in a kadai


Add in onions, garlic, ginger and green chilli


Saute for a min


Add in some turmeric powder


Add in tomatoes


Saute for a while


Add the cooked vegetables


Mix them around


Add a tsp of sugar


Mix well


Keep cooking till everything dried up and mixed well


Add it to a blender


Add in fresh coriander leaves


Add in salt and tamarind


Puree them


Transfer to a bowl


Heat oil and temper the seasoning ingredients


Let it sizzle for a min


Pour it over the chutney and mix


Serve

  7. Wow, I've never made chutney with so many vegetables at once (only carrots). I had some leftover beans and cauliflower, so I tried it yesterday and it was great, better than I thought. We had it with chicken fry and chapatis. My husband described it as "awesome comfort food".
