Mint is my favorite flavouring to food..They somehow make food so fresh and flavourful.Talking about flavours, these rice is packed with lots of flavours and this is one of my favorite. I made a mint masala paste and mixed it with rice. The tempering which goes in this paste makes the difference..They make this rice unique and flavourful..

Rice – 3 cups Cooked and Cooled
Mint Leaves / Pudhina – 2 cup tightly packed
Coconut – ½ cup
Garlic – 5 cloves
Green Chilli – 3
Salt to taste
Sugar – 1 tsp
Ghee – 3 tblspn
Mustard Seeds / Kaduku – 1 tsp
Channa Dal / Kadala Paruppu – 1 tblspn
Urad dal / Ulundu Paruppu – 1 tblspn
Cashew – 10 piece
Cinnamon / Pattai – 1 small stick
Cardamom / Yelakai – 4
Bay Leaf / Brinji ilai – 1
Grind all the ingrediants given in the list to a fine paste. Set this aside.
Heat ghee in a pan. Add all the ingrediants given in the list in the given order and sauté for a min till they turn golden.
Add the ground masala and mix well. Cook till oil separates. It will take around 10 mins. Add sugar and mix well. Mint Rice Paste is done.
Add in cooked rice and mix well. Saute for 2 mins.

|take the grinding ingrediants in a blender|
|and make into a puree|
|Temper the ingrediants given in the list in some ghee|
|till they turn golden|
|add the pureed masala|
|cook till they leave the sides of the pan|
|add a tsp of sugar..This is optional|
|and mix well..Mint thokku done|
|and toss well|
