    Brinjal Fry / Fried Eggplant with Onions and Curry leaves

    This is a simple fried brinjal which takes only few minutes to make..I am feeling really tired now to explain about this dish..I know the pictures speaks for itself..Off you go to the step by step recipe with pictures..

    Preparation Time : 5 mins
    Cooking Time : 10 mins
    Serves : 2 to 3


    Ingrediants:

    Brinjal / EggPlant-1 sliced into rounds
    Red chilli powder-2 tsp
    Turmeric powder / Manjal podi-1 tsp
    Onion-1 large sliced
    Curry leaves-1 spring
    Oil for shallow frying
    Salt to taste


    Method:

    In a mixing bowl add chilli powder,turmeric powder,salt...

    Add water and make into a smooth paste..

    Now add the sliced brinjal in this and toss well.

    Heat oil in a frying pan and add in the brinjals..

    Fry this till golden and crisp on both sides..

    Remove it on a plate..

    Now in the balance of the oil add in the onions and curry leaves..

    Fry this for 2 mins..Put this onion over the brinjal..

    Serve with rice and dal..
