Walnut Burfi Recipe - Walnut Khoya Barfi Recipe



This is one recipe which i found in a cookbook which hubby got for me, i had few packets of walnuts lying in the fridge so i decided to try it immediately.

Since diwali is in a few days i have started making so many snacks and sweets for diwali..So i made a big batch of my homemade khoya, For Homemade Khoya, Check out traditional version and instant version.. You can use store bought khoya as well.


I used walnuts in this, you can use cashews or almonds in this as well..This burfi has a soft and nutty texture and taste.

Preparation Time : 10 mins
Soaking Time: 1 hour
Cooking Time : 30 mins
Makes : 12 to 15 sqaures

Ingredients:

Walnuts - 1/2 cup + 1/4 cup
Milk - 1/4 cup
Khoya / Mawa - 250 grams
Sugar - 1/4 cup
Ghee - 1 tblspn + more for greasing
Cardamom Powder - 1/2 tsp

Method:

Take 1/2 cup of walnuts in a bowl, add in 1/4 cup of milk and soak it for 1 hour. Now take it in a blender and puree coarse.

Now heat 1 tblspn of ghee in a kadai. Add in the remaining 1/4 cup walnuts and saute till golden, drain and set aside.

Now in the same ghee, add in khoya and sugar and mix well. Now add in the walnut puree and mix well.

Keep cooking this till it gets thick and leaves the sides. Add in cardamom powder and fried walnuts and mix well.

Spread this on a greased plate and let it set for few hours.

Slice and serve.

Grease a tray with ghee and set aside

Measure 1/2 cup of walnuts


add in 1/4 cup of milk


leave it to soak for an hour


Now take all your ingredients


Now it is soaked


Add it to blender 


Puree to a coarse mix


Heat a tblspn of ghee


add in walnuts


saute till golden


now it is done


Drain it


now in the remaining ghee


add in mawa


mix well


add in sugar


mix well


add in walnut puree


mix well


Keep cooking them..


it will get thick


now it has got really thick


add the fried walnuts


mix well


add in cardamom powder


spread it on the greased tray


smooth it


Place walnuts over it and let it set


cut it into squares
