Parfait's are a lovely way to start a day. Specially this one is so special. Because it has all breakfast goodness packed in a single glass. Are you bored of having the same oatmeal porridge again and again. Then why not give this a try..It has a yummy vanilla scented oatmeal, which is topped with a caramalized pineapple chunks and then to give it a final most touch everything is covered with a glorious vanilla yoghurt with a lovely sprinkle of sultanas.
I used Del Monte Pineapple slices, I chopped it and used it. These pineapples turned out so good when they are caramalized and had got its touch of aromatic spices like cinnamon. I added a dash of chilli flakes to give this a tiny little kick.

Everything came out so together in minutes. The cool thing about this is everything is served cold. So you can whip up this in the night and enjoy it in the morning. This make a filling meal for breakfast and gives you all the energy you need for the entire day.

Ingredients:
For Vanilla Oatmeal:
Instant Oats - 1/2 cup
Milk - 250 ml
Vanilla Essence - 1 tsp
Sugar - 3 tblspn
For Spiced Pineapples:
Butter - 1 tsp
Del Monte Pineapple Slices - 1 cup chopped
Sugar - 3 tblspn
Salt - 1/4 tsp
Cinnamon powder - 1/2 tsp
Red Chilli Flakes - 1/2 tsp
For Vanilla Yoghurt:
Thick Unsour Curd / Yoghurt - 1 cup
Sugar - 3 tblspn
Vanilla Essence- 1 tsp
For Topping:
Sultanas or any nuts of your choice
Method:
Start by making vanilla oatmeal. Take milk, sugar, vanilla and oats in a sauce pan. Heat it up and cook till the oats get thick and creamy. Spoon these in the bottom of individual glasses.
Now make the spices pineapple. Heat butter in a sauce pan. Add pineapple pieces along with salt, sugar, cinnamon, red chilli flakes and mix well. Cook till they turn golden and caramalized. Spoon this over the oat meal and allow them to cool down a bit.
Now make the vanilla yoghurt. Take curd, sugar and vanilla in a bowl and mix well with a spoon. Top the spiced pineapple with this and sprinkle some sultanas over that.
Place in the fridge for a hour and Serve cold.

This looks delicious! I love oatmeal and yogurt together. I posted a simple recipe on my blog for Easy Overnight Oatmeal that includes almond milk, oatmeal, yogurt, and jam. You mix it up and refrigerate overnight.
