Burnt Garlic Noodles Recipe / Burnt Chilli Garlic Noodles Recipe / Fried Garlic Noodles / Garlic Noodles Recipe

This dish is so quick to make, and very garlicky. You can see my addiction to garlic from my last garlic tomato chicken roast recipe..But in this recipe, garlic is used in a different avatar. It is fried and crushed. This noodles is so simple to make, just take around 15 mins to whip up from start to finish. So try it and enjoy it with any indo chinese sidedish..I had it with chilli mushroom..

Preparation Time: 10 mins
Cooking Time : 20 mins
Serves: 2 to 3


Plain Egg Noodles / Plain Veg Noodles - 1 packet / 200 grams
Burnt Garlic / Fried Garlic - 3 tblspn
Dry Red Chilli - 3 broken
Onion - 1 large sliced thinly
Salt to taste
Sugar - 2 tsp
Ajinomoto - 1 tsp ( Optional - I didn't use)
Light Soya Sauce - 2 tblspn or to taste
Vinegar - 1 tsp or to taste
Oil - 2 tblspn
Spring Onion / Green Onion - a handful finely chopped


Boil lots of water in a sauce pan, add in some salt. Once it boils again, add the noodles and cook till done (as per package directions). Drain in a colander and set aside.

Take burnt garlic in a pestle and mortar and crush them coarsely.

Heat oil in a large wok, always cook noodles on high heat.. Add in dry red chilli and saute for 30 secs.

Add in onions and saute for a min. Add in crushed fried garlic and saute well.

Add in salt and sugar and cook for around 5 mins or so.

Add in the cooked noodles and mix well.

Add in soya sauce and vinegar and mix well.

Toss this on high heat till everything is mixed well and heated all the way through.

Now throw in a handful of chopped spring onion and mix well.

Serve hot.

Start by boiling the noodles..
Always boil noodles in salted water
Drain and set aside
Now take your burnt garlic in a pestle and mortar

Crush them
Crush till the coarsely done

Heat oil in a wok

Add few broken dry red chilli

Add in sliced onions

Saute them

Add the crushed garlic

Add in salt, and some sugar

Saute till the onions is light golden

Add the cooked noodles

Toss well

Add in soya sauce

Some vinegar

Mix that around

Now add in chopped green onions

Mix them around

Serve hot..
