Spicy Egg Scramble with Vegetables
Hai Friends Hope you all are getting ready for a wonderful weekend..But for me this week(even this month) is going to be a long one,because of work pressure we are working all days in this month…I know everything is going to be fine..

Now coming back to today’s recipe…If you are not in a mood to cook anything and feeling really tired and hungry…You just want to find some Eggs in the fridge and the problem is over.I don’t know about you,this is how I feel always…Eggs are such a versatile ingrediants ever…You could do anything with egg in just minutes..This is one of the dish which you want to eat right off the pan…Just a Egg scramble but I boozed it up with lots of veggies and spice powders…The cool thing about scrambled eggs is you can make it into the consistency you like,either you could make it gooey or dry that suite the dish that you are going to serve it with..This can be served as it is with any plain rice and rasam or with roti and even bread…
Ingrediants:
Eggs-4
Onion-1 chopped
Cabbage-1/2 cup chopped
Carrot-1 chopped
Capsicum/Bell Pepper- ½ chopped
Tomato-1 chopped
Red chilli powder-1 tsp
Coriander powder / Malli podi-2 tsp
Turmeric powder / Manjal podi- ½ tsp
Garam masala powder-1 tsp
Salt to taste
Oil-1 tblspn
Coriander leaves/Cilantro/Spring onion for garnishing 
Method:
Heat oil in a kadai and add in onions..let it cook for 2 mins.
Add in all vegetables and mix well..Let this cook for 5-10 min until done.
Add in chilli,coriander,turmeric,garam masala powder and mix well.Season with salt..
Add in tomatoes and mix well..Cook this for 1 min..
Pour in the egg and scramble it till it gets perfect for you..
Garnish with cilantro or spring onion and enjoy with rice..

Saute onions…
add in vegetables and cook it..
Spice it with some spice powders…
add in tomatoes
cook well…
pour in the beaten eggs
start scrambling…
scramble…
till you get desired consistency…
Garnish with you favorite herbs…
Serve…
Delicious sidedish…

    Egg scrambles are the way for me to go. Any other prep method and the texture of eggs begins to gross me out after a couple of bites. This looks and sounds really delicious. Yummy!

    Must tell u that I am an avid follower of yr site and love yr pictorials
    I did make this dish for dinner yesterday and it was such a joy and gave me immense pride to see my dear husband licking off his fingers after scraping thru the last bits of this dish!! Thanks a tonne and God bless!!
