    Mixed vegetable thoran recipe with step by step pictures. This delicious mixed veg thoran taste delicious with kulambu and rice.

    Mixed Vegetable Thoran

    If you have some left over vegetables lying around,Go and pick everything to make this lovely dish. This is also called as Thoran here. But this dish is quite different, It is a Thoran with Aarthi’s Twist in it. The twist comes from peanuts and frying the coconuts.This dish looks colourful which I always love. The other special thing is, It can go as a great filling for roti rolls. So hope you loved it. So here you go for the recipe with step by step pictures.

    Ingredients for vegetable thoran

    • Carrot-2 large chopped
    • Beans-20 chopped
    • Coconut-3 tblspn grated
    • Peanuts-3 tblspn roughly crushed
    • Mustard seeds / Kaduku-1 tsp
    • Cumin seeds / Jeerakam-1 tsp
    • Urad dal / Ulundu parupu-1 tsp
    • Channa dal / Kadala parupu-1 tsp
    • Asafoetida / Hing / Kaya podi- ¼ tsp
    • Oil-1 tblspn
    • Curry leaves-1 spring
    • Salt to taste

    How to Make Mixed Veg Thoran

    1. Microwave chopped carrot and beans by adding some water and salt for 5 mins.
    2. Heat oil in a kadai, add in mustard seeds, channa dal, urad dal, cumin seeds, peanuts, hing, curry leaves and mix well.
    3. Now add in coconut and mix for 1 min.
    4. Now add in cooked veggies and mix well. Add a splash of water and mix well.
    5. Cover and cook for 10 mins on a very slow flame.By which time the veggies must have absorbed all flavours and cooked completely.
    6. Serve this with rice and dal.

    Chop up your vegetables

    Take that in a microwave safe bowl, add some salt and some water. Cover and cook.

    Crackle some mustard seeds in oil

      Wow, Very nice dish - so colourful and completely non-spicy. I discovered it's a great way to get the kids to eat a lot of veggies with their dinner. I absolutely loved it too, couldn't stop eating it straight from the pan.
