Sweet, Sour, Spicy all packed in a simple pickle..It is lipsmackingly delicious..I made it yesterday and loved it to the core..I started eating it as it is, it is so good..It makes a perfect match with hot rotis and curd rice. I have quite a few pickle recipes on hand, so makesure you check all of them..

Preparation Time : 10 mins
Resting Time : 2 hours
Cooking Time : 10 mins

Ingredients:

Lemons / Limes – 1 kg
Sugar – 400 grams / 2 cups
Salt to taste
Chilli powder – 250 grams or as per your taste

Method:

Wash lemons well. Wipe them dry. Now cut each lemon in 8 pieces and remove the seeds.

Take those lemons in a bowl, add in sugar and salt. Leave them to steep for a couple of hours.

Now pour them to a kadai and bring it to a boil.

Lower the heat and add in the chilli powder. Mix well.

Cook on a low flame till the chilli powder is coated all over the lemons.

Switch off the heat and let them cool down. They will get thicker as they cools.

When it is completely cold, transfer it to a sterlized bottle and store in fridge.

Notes:

1)I stored this pickle in fridge in a clean air tight container.
2)The pickle may look runny when it is on the stove, it get thicker as it cools.
3)If you cook your pickle for too long, the skin may get hard. But it taste really good like a sweet, sour, spicy toffee.
4)The amount of sugar, salt, chilli powder depends upon you. But If you add too much then the pickle will be little liquidy.
5)Always use clean spoons while handling this pickle.


Pictorial:

Take all your ingredients
Wipe your lemons dry
Take them in a chopping board
Cut them in half
Cut them in half again
Cut those half in quarters
All chopped
Take them in a bowl
Add sugar to it
Add in salt
Mix well
Cover and let them stay for couple of hours
After few hours most of the water must have leached out
Heat a pan
Add the lemon pieces
Let them cook for a min
Once them reach a boil
Add in chill powder
Mix them well and switch off them heat..
It will get thick as it cools..Done..

    @HelenI think u must have over cooked it.So it has turned bitter..Add more sugar and cook

    Hai arti, the pickle was kept in fridge. After one week ,lemon also became very tasty.usually my husband does not like my pickle. But this he liked and if I forget to take pickle during lunch time, he himself reminds me of it .

    Hi,
    I have tried this recipe.and I gotta say its tangy sweet and good. I have added a tsp of vinegar for preservation. Only PBM I faced is lemon s raw still. I love the lemon in pickles. Is that so its supposed to be in this recipe. Thank you for the recipe.

    After making the pickle i feel the sweetness is little less. Can I add extra sugar into the pickle jar and mix. will it get spoiled??

    @Anonymousu can add sugar and mix, but it will reduce the shelf life, so take a small amount and add sugar
